Cheese-Lover's Pasta Roll-Ups

Heat oven to 375 deg Mix first 5 ingredients until well blended
- 1 egg, beaten
- 1 container (15 oz) Ricotta cheese
- 2 cups 2% milk shredded Italian three cheese blend
- 4 green onions, chopped
- 1 Tbsp Italian seasoning
- 1 jar (26 oz) spaghetti sauce, divided
- 16 lasagna noodles, cooked
- 1/4 cup grated Parmesan cheese
Goulash (Prince Pasta Recipe)

Prepare elbows according to pkg directions; drain
- 1/2 of a 1 lb pkg elbows, uncooked
- 1 lb ground beef
- 1 med onion, chopped
- 1/2 cup sliced celery
- 1 28oz can whole tomatoes, cut up (undrained)
- 1 8oz can tomato sauce
- 1 tsp salt
- 1/2 tsp marjoram leaves
- 1/4 tsp thyme leaves
- 1/4 tsp pepper
- 1 cup shredded American cheese
Black Pepper Flat Iron Steaks

Place steak into a large zip-lock bag
- 1 flat iron steak
- 2 onions, sliced
- 1 cup red wine vinegar
- 1/2 cup vegetable oil
- 1/3 cup firmly packed brown sugar
- 1 Tbsp chopped fresh oregano
- 1 Tbsp chopped fresh rosemary
- 1/2 tsp hot sauce
- 1/2 tsp salt
- 2 Tbsp coarse ground black pepper
Chili Dip

Cook on stove in saucepan or in crockpot until cheese is melted
- 1 lb hamburger, browned and drained
- 1 lg can Hormel chili no beans
- 4 oz mild or hot taco sauce or 8 to 10 drops tabasco sauce
- 1 lb velveeta, cubed
Fettucine Alfredo

In Dutch oven, prepare fettucine according to pkg directions; drain
- 1/2 of a 12oz pkg fettucine, uncooked
- 1/3 cup softened butter
- 3/4 cup whipping cream, room temperature
- 3/4 cup freshly grated Parmesan cheese
- 1/2 tsp salt
- 1/8 tsp white pepper
- dash ground nutmeg
- coarse ground pepper
- grated Parmesan cheese
Salmon Grilled

Blend mayonnaise, lemon juice and pepper
- 1 lb salmon fillet
- 8 oz mayonnaise
- 1 Tbsp lemon juice
- pinch of salt
- pinch of pepper
- 2 Tbsp chopped fresh dill
Chicken Florentine Lasagna (healthy version)

Preheat oven to 375 degrees
- 1-1/2 Tbsp butter or margarine
- 3 Tbsp flour
- 2 - 12oz cans evaporated skim milk
- 1/2 tsp salt
- 1/8 tsp nutmeg
- 16 oz nonfat cottage cheese
- 3/4 cup reduced fat shredded mozzarella cheese
- cooking spray
- 7 oz whole wheat lasagna noodles, cooked and drained
- 1-1/2 cups cooked chicken breast, shredded
- 1 - 10oz pkg frozen chopped spinach, thawed & drained
- salt and pepper
- 2 Tbsp grated Parmigiano Reggiano
- 2 Tbsp fresh parsley
Layered Bean Dip

- 1 (16oz) can fat-free refried beans
- 1 (15oz) can black beans, rinsed & drained
- 1/2 cup reduced-fat sour cream
- 1 cup bottled salsa
- 1 cup (4oz) shredded Mexican blend or cheddar cheese
- Chopped cilantro (optional)
Creamy Chicken & Broccoli Casserole

Philadelphia Cooking Creme recipe
- 1-1/2 lb boneless skinless chicken breasts, cut into bite size pieces
- 1 pkg (14oz) frozen broccoli florets, thawed & drained
- 1-1/2 cups shredded sharp cheddar cheese
- 1 tub (10oz) Philadelphia Savory Garlic Cooking Creme
- 1/2 cup milk
- 24 Ritz crackers, crushed (about 1 cup)
- 1 Tbsp butter, melted
Skillet Sausage and Potatoes

Heat 3 tbsp olive oil, over medium heat, in a large skillet
- 4 tbsp olive oil
- 1 3/4 lb unpeeled red-skinned potatoes, cut into 1/4-inch cubes
- 2 sweet onions,chopped
- 1/2 lb cooked smoked turkey sausage
- 2 tbsp fresh thyme, or 1 tsp dried, crushed
- 2 tsp cumin seeds, slightly crushed
- 1/4 tsp salt
- 1/4 tsp pepper
