Old-Fashioned Chicken and Noodles

In a large pot over medium heat, combine chicken, celery and their tops, carrot, onion and its peel, and pepper
- 1 (2 to 3 pound) whole chicken, cut into pieces
- 4 stalks celery, diced

- ground black pepper to taste
- 3 (32 fluid ounce) containers chicken broth
- 2 eggs, beaten
- 1 cup warm water

- 3 cups all-purpose flour
Salsa Chicken Rice Casserole

Place rice and water in a saucepan, and bring to a boil
- 1 1/3 cups uncooked white rice
- 2 2/3 cups water
- 4 skinless, boneless chicken breast halves
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded Cheddar cheese
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 onion, chopped
- 1 1/2 cups mild salsa

- 1/2 cup white sugar
- 1/4 cup margarine, melted
- 3/4 teaspoon ground nutmeg
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 1/4 cup margarine, melted
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
Slow Cooker Spicy Black-Eyed Peas

Pour the water into a slow cooker, add the bouillon cube, and stir to dissolve
- 6 cups water
- 1 cube chicken bouillon
- 1 pound dried black-eyed peas, sorted and rinsed
- 1 onion, diced
- 2 cloves garlic, diced
- 1 red bell pepper, stemmed, seeded, and diced
- 1 jalapeno chile, seeded and minced
- 8 ounces diced ham
- 4 slices bacon, chopped
- 1/2 teaspoon cayenne pepper
- 1 1/2 teaspoons cumin
- salt, to taste
- 1 teaspoon ground black pepper
Baked Fish and Crabmeat With Sour Cream Sauce

Melt butter in saucepan over medium-low heat; blend in flour, then gradually stir in milk
- • 2 tablespoons butter
- • 2 tablespoons all-purpose flour
- • 1 cup milk
- • 1/4 teaspoon salt
- • 1/2 cup shredded sharp Cheddar cheese
- • 1/2 cup sour cream
- • 1 1/4 to 1 1/2 pounds fish fillets (3 to 4 fillets), cut into large chunks (roughy, haddock, etc.)
- • 1 cup crabmeat or medium cleaned and peeled shrimp
- • 1 cup scallops, bay or cut up sea scallops
- • hot cooked rice for 4 to 6 people
- • 1/4 cup toasted pecan pieces or almonds*
Sloppy Joes

- 1 lb. hamburger
- 1/2 large onion
- 2 t. mustard
- 1/4 c. brown sugar
- 1 c. ketchup
- 1/4 c. barbeque sauce
- 1 T. Worchester sauce

- 2 cloves garlic, finely chopped
- 3 anchovy fillets
- 1/2 lemon, juiced
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 egg yolk
- 1 dash Worcestershire sauce
- 1/4 cup olive oil
- 1 pinch salt and ground black pepper to taste
- 1/2 head romaine lettuce, chopped
