POTATO PUFFS

Directions Preheat oven to 400 degrees F
- Ingredients
- 3 cups of mashed potatoes
- 2 eggs
- 1/3 cup sour cream (optional extra for serving)
- 1 heaping cup shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped chives or parsley
- Salt and black pepper, to taste
Easy Breakfast Casserole from Country Crock®

Preheat oven to 350 degrees F
- 1/2 cup Country Crock® Spread, divided
- 3 cups assorted fresh vegetables (peppers, onions, and/or broccoli)
- 8 eggs
- 2 cups 2% milk
- 2 cups shredded low-fat Cheddar cheese, divided
- 1 (16 ounce) package frozen hash brown potatoes, thawed
- 8 slices bacon, crisp-cooked and crumbled
Fettuccini Carbonara

Heat olive oil in a large heavy saucepan over medium heat
- 5 teaspoons olive oil
- 4 shallots, diced
- 1 large onion, cut into thin strips
- 1 pound bacon, cut into strips
- 1 clove garlic, chopped
- 1 (16 ounce) package fettuccini pasta
- 3 egg yolks
- 1/2 cup heavy cream
- 3/4 cup shredded Parmesan cheese
- salt and pepper to taste
Grits and Grillades (recipe I use)

Coat meat in flour, salt and pepper mixture
- 1 1/2 lb. beef round steak, 3/4 in thick
- 1/4 c. flour
- 1 1/2 t. salt
- 1 t. black pepper
- Vegetable oil
- 1 large onion, finely chopped
- 1 small green pepper, cored, seeded and finely choped
- 1 small red pepper, cored, seeded and finely chopped
- 3 cloves garlic, minced
- 1 can (16 ox) whole peeled tomatoes, drained and chopped or 2 c. chopped fresh tomatoes
- 1 bunch fresh parsley, finely chopped
- 3/4 water
- Dash tabasco
- Grits
- 4 c. water
- 1 t. salt
- 1 c. quick grits
- 2 T. butter
Barbeque Bacon Chicken Bake

Preheat oven to 350 degrees F (175 degrees C)
- cooking spray
- 8 slices bacon
- 4 skinless, boneless chicken breast halves
- 3/4 cup barbeque sauce (such as Cattlemen's® or Jack Daniel's®)
French Salad Dressing

House dressing
- 1/4 c. lemon juice
- 3/4 c. vinegar
- 1/3 c. sugar
- 1 1/2 TBLSP salt
- 1/2 tsp. pepper
- 2 tsp. mustard
- 2 c. canola oil
- 1 tsp. chopped garlic
- sometimes I use some red pepper flakes
- Shake and refrigerate. Will keep forever.
Breaded Pork Cutlets (Pork Schnitzel)

1. Place bread cubes on large microwave safe plate
- 7 large cubes bread (about 4 cups)
- 1/2 c. all purpose flour
- 2 large eggs
- 2 c. vegetable oil
- 1 pork tenderloin 1 1/4 lbs. trimmed and cut on angle into 4 equal pieces
- Garnishes: lemon, fresh parsley leaves, capers, hard cooked egg
Roasted Root Vegetables With Apple Juice

Boil apple juice and wine in a large saucepan until reduced to 3/4 cup, about 30 minutes
- 3 tablespoons butter
- 3 cups apple juice
- 1 cup dry white wine
- 1 1/4 pounds turnips
- 1 1/4 pounds parsnip
- 1 1/4 pounds carrots
- 1 1/4 pounds sweet potatoes
- 1 1/4 pounds rutabagas
- salt and pepper to taste

- 1 (7 ounce) jar marshmallow creme
- 1 1/2 cups white sugar
- 2/3 cup evaporated milk
- 1/4 cup butter
- 1/4 teaspoon salt

- 1 cup semisweet chocolate chips
- 1/2 cup chopped nuts
- 1 teaspoon vanilla extract
