Spicy Crab Salad

Toss crab, beans, corn and corn chips
- 3 oz. canned crab (drained)
- 1/3 cup reduced-sodium canned black beans (rinsed and drained)
- 1/3 cup cooked corn
- 1 oz. crushed corn chips
- 2 cups spinach
- 1 Tbsp lime juice
- 1 1/2 tsp olive oil
- 1/8 tsp chili powder
Parmesan-Cruste Turkey Breast

1. In a medium pot of salted water, bring the potatoes to a boil and cook halfway to tender, about 7 minutes
- 4 baking potatoes (about 2 pounds), peeled and quartered
- 1/2 head broccoli, stems discarded and florets coarsely chopped
- 1 Tablespoon butter
- salt and pepper
- 1 pound skinless, boneless turkey breast, cut into 4 pieces and pounded thin
- 1 cup panko breadcrumbs
- 1/4 cup parmesan cheese
- 1 egg
- 2 Tablespoons extra-virgin olive oil
Apple Bread

1. Preheat oven to 325F. Grease 2 9x5x3-inch loaf pans; set aside
- 3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 3 large eggs
- 1 cup vegetable oil
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 3 cups diced apples
Overnight Layered Lettuce Salad

1. In a 3-qt or 13x9-in glass dish, layer first five ingredients
- 1 medium head iceberg lettuce, torn
- 1 medium green pepper, chopped
- 1 small sweet red pepper, chopped
- 1 medium onion, sliced and separated into rings
- 2 c frozen peas (about 10 oz)
- 1 c mayonnaise
- 2 tbs sugar
- 1 c (4 oz) shredded cheddar cheese
- 12 bacon strips, cooked and crumbled
- 3/4 c dried cranberries
Apple Fritters

Peel and core apples; slice into 1/4-inch-thick rings
- 2 apples
- 1 c buttermilk
- 2 tbs sugar
- 1 1/2 c flour
- pinch cinnamon
- pinch salt
- vegetable oil
Frozen Blueberry Lemonade

Combine ingredients in blender and puree until smooth
- 3 cups ice
- 1 1/2 cups blueberries
- 1 cup lemonade
- 1/2 cup fresh mint leaves
- 1/4 cup confectioners' sugar
Red Velvet Gooey Butter Cake

1. Preheat oven to 350 F
- Cake Base
- 1 box red velvet cake mix
- 1 egg
- 1/2 c butter, melted
- Filling
- 8 oz cream cheese, softened
- 3 eggs
- 1/2 c butter, melted
- 4 tbs cocoa powder
- 1 tsp vanilla
- 1 oz bottle red food coloring
- 1 lb powdered sugar
- 1 c white chocolate chips
Fried Mozzarella

Preheat oven to 250F. Place flour in a bowl
- 1 cup all-purpos flour
- 2 large eggs
- 1 cup panko or plain dried breadcrumbs
- 1 teaspoon dried thyme
- coarse salt and ground pepper bocconcini (bite-size fresh mozzarella balls; 1 pound total)
- 2 cups vegetable oil

1. Heat the olive oil in a large saucepan over medium heat
- 1 Tablespoon extra-virgin olive oil
- 5 cloves garlic (4 smashed, 1 minced)
- 1 28-can plum tomatoes, crushed by hand
- 1/2 cup fresh basil leaves
- 1 small piece Parmesan rind (optional)

- 3/4 pound 93% lean ground turkey
- 1/2 cup chopped fresh parsley, plus more for topping
- 1 slice stale whole wheat bread, crust trimmed, bread chopped
- 1/4 cup part-skim ricotta cheese
- 2 Tablespoons grated Parmesan cheese, plus more for topping
- 1 large egg white, lightly beaten
- 12 ounces whole-wheat spaghetti
