Brush each toast lightly with olive oil and sprinkle with 1 Tbsp
- Four 1/2-inch slices of rye or whole-wheat bread, lightly toasted
- 5 Tbsp. olive oil
- 1/2 cup freshly grated Parmesan cheese
- 1 ounce dried shiitake or procini mushrooms
- 6 shallots, chopped
- 3 cloves garlic, minced
- 1/2 pound fresh wild mushrooms, wiped clean and thinly sliced
- 1/2 small white button mushrooms, halved
- 2 tsp. chopped fresh thyme or 1 tsp. dried thyme
- 1 Tbsp. sherry vinegar (optional)
- 1/2 cup chicken stock
- Salt and coarsely ground black pepper
- 2 Tbsp. chopped flat-leaf parsley

- 2 Tablespoons Vegetable Oil
- 1/3 cups Unsweetened Applesauce
- 3 whole Eggs

Baked Chicken and Mushrooms Recipe

I made up this dish years ago, and it still remains a family favorite
- 6 boneless skinless chicken breast halves (4 ounces each)
- 1/4 teaspoon paprika
- 1/2 pound fresh mushrooms, sliced
- 1 tablespoon butter
- 1/2 cup sherry or chicken broth
- 3 green onions, chopped
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup shredded part-skim mozzarella cheese
Chipotle Shrimp & Poblano Tostadas

Preheat broiler to 550 F. Arrange tortillas on a baking sheet lined with foil and lightly spray with olive oil
- 6 (6-inch) corn tortillas
- olive oil cooking spray
- 2 tsp olive oil
- 1 lb shrimp, peeled, deveined, and roughly chopped into 1/2-inch bites
- 1 poblano pepper, diced
- 1 tsp cumin
- 1/2 tsp chipotle chili powder
- pinch of cayenne
- 4 cups lettuce, shredded
- 1/2 cup tomatoes, diced
- 1 avocado, diced
- 1/2 cup salsa
- 6 Tbsp nonfat plain Greek yogurt
- 6 Tbsp (1.5 oz) Cojita cheese, shredded
Herbed Potatoes and Spinach Stir-Fry

Being a medium saucepan full of lightly salted water to a boil
- 2 pounds red-skinned potatoes, unpeeled, cut into 1-inch dice
- 2 Tbsp. olive oil
- 1 Tbsp. dried rosemary or 2 Tbsp. fresh rosemary
- 1/4 tsp. salt
- 1/4 tsp. coarsely ground black pepper
- 12 ounces fresh spinach, washed and stemmed
- 3 scallions, thinly sliced with some of the green
- 2 ounce grated fresh goat cheese
- 2 Tbsp. finely chopped flat-leaf parsley for garnish

- Dumplings:
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 2 garlic cloves, minced
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 2 tsp. sugar
- 1 tsp. salt
- 1 tsp. dried basil
- 1/2 tsp. pepper
- 4 cups chicken broth
- 1 package (10 ounces) frozen green peas
- 4 cups cubed cooked chicken
- 2 cups biscuit/baking mix
- 2 tsp. dried basil
