Million Dollar Relish

Boil together and thicken with 3 heaping tbsp cornstarch
- In morning drain well and add:
- 8 large cucumbers, deseeded but not peeled
- 2 red peppers
- 2 green peppers
- 2 lbs onions
- Chop together (use meat grinder or food processor), let stand overnight in brine made of 8 cups hot water and 1/2 cup salt. (Can use cucumber juice)
- 1 tbsp turmeric
- 2 tbsp mustard seed
- 1 tbsp celery see
- 6 cup white sugar
- 4 cup vinegar

- 1 tomato, seeded and diced
- 1/2 red onion, finely diced
- 1 green onion, finely diced
- 1/2 red pepper, finely diced
- 1 tsp finely minced garlic
- 1/4 thai chili pepper, finely diced and seeds removed
- handful of chopped cilantro
- 1 lime, juiced
- sea salt
- freshly ground pepper
