Light fresh and summery basil pesto marinated grilled shrimp
- 1/2 cup basil, packed
- 1 small clove garlic
- 1 tablespoon pine nuts, toasted
- 2 tablespoons parmigiano reggiano (parmesan), grated
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (~1/4 lemon)
- salt and pepper to taste
- 1 pound shrimp, peeled and deviened
Super Salad

- Lettuce, any variety
- Cucumbers
- Onions
- Tomatoes
- Any salad vegetable from the 17 Day Diet lists
- 2 hardboiled eggs,

- 4 tablespoons balsamic vinegar

- 6 Cups Granny Smith Apples, sliced
- 1/3 cup white sugar
- 1 tablespoon flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 cup chopped pecans, divided
- 2 Tablespoons Lemon Juice
- 1/2 cup flour
- 1/2 cup old fashioned oats
- 1/2 cup light brown sugar
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup butter, chopped into pieces
Spicy Egg White Omelette

Combine your egg whites and seasonings and cook in a small non-stick pan
- 3/4 C egg whites
- salt, pepper, and garlic powder to taste
- dash of cayenne pepper
- dash of red chili flakes
- sprinkling of low or non-fat mozzarella cheese (for flavor, not as main ingredient)
TACO LASAGNA

- 1 pound ground beef, 96/4
- 1 packet taco seasoning
- 1/4 cup water
- 1 can Ro*Tel diced tomatoes with chiles, drained
- 1 can Nacho Cheese Soup
- 1/4 cup sour cream
- 1 cup grated cheddar
- 12 8-inch soft tortillas
- guacamole, cilantro, sour cream for topping, as desired

SPICY BLACKBERRY MARGARITA

Fill cocktail shaker with tequila, lime juice, blackberries, sliced jalapeños, agave nectar, and ½ cup of ice
- 2 ounces of tequila
- 2 ounces of lime juice
- 5 blackberries plus more for garnish
- 3-4 slice of fresh jalapeño
- 1 ounce of agave nectar
- 1 cup of ice (1/2 used in the shaker and 1/2 used to serve the drink)
