TOFU AND WALNUT VEGAN TACO MEAT (GLUTEN-FREE)

Chewy and ‘meaty’ vegan taco meat! High in protein, versatile and crazy delicious, this tofu and walnut taco me
- 2 cups (200g) Walnuts
- 16oz (450g) Extra Firm Tofu
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/2 tsp Smoked Paprika
- 1 tsp Oregano
- 1/4 tsp Cayenne Pepper
- 1 Tbsp Nutritional Yeast
- 1 Tbsp Olive Oil
- 2 Tbsp Dark Soy Sauce*
- 1 Tbsp Maple Syrup
- 2 Tbsp Tomato Paste
Egg Drop Soup

Once boiling, stir the soup quickly while adding in egg mixture
- Chicken broth
- green onions, finely chopped
- red onion, finely chopped
- mushroom pieces
- 2 beaten eggs - only 1 yolk
Salmon -Asian Sesame

Preheat over to 375. In a small bowl, combine honey, green onions, soy sauce and spices until well blended
- 2 lb salmon fillets
- 1/3 cup honey
- 1/3 cup thinly sliced green onions
- 2 tbsp soya sauce
- 2 tsp sesame seeds
- 1 tsp minced garlic
- 1 tsp minced onion
- 3/4 tsp ground ginger
- 1/2 tsp crushed red pepper
Vegetable Kebabs

Preheat oven to 450 . Place vegetables in bowl
- 2 red peppers, in bite size pieces
- 1 zucchini, cut in two and sliced thick
- 1 red onion, in large pieces
- 2 tbsp. Soya sauce
- 1 tsp. Worcestershire sauce
- 1 tsp. Oil
- 2 garlic cloves, smashed and chopped
- 1/2 tsp. Tarragon
- 1/2 cup barbecue sauce
Peanut butter cookies - 3 ingredient

- 1 cup peanut butter
- 1 cup sugar

Oreo Ice Cream Cake

- 15 Oreo cookies
- 1 tablespoon milk
- 8 -9 ice cream sandwiches, depending on size
- 1 pint mint chocolate chip ice cream
- 1 pint vanilla frozen yogurt
- 1 pint strawberry ice cream or 1 pint frozen yogurt
- 1 (8 ounce) container frozen whipped topping, thawed
Rice Krispie Squares

Melt butter in saucepan. Add marshmallows, continue melting
- 1/4 cup butter
- 5 cups mini marshmallows (or approximately 40 large marshmallows)
- 1/2 tsp vanilla

- Brownie Batter:
- 1/3 cup butter , melted
- 1/2 cup brown sugar
- 1/4 cup white sugar (or natural granulated sweetener to cut down on calories)
- 1/3 cup unsweetened cocoa powder
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour (or plain flour)
- Cookie Dough:
- 1/4 cup butter , softened
- 1/4 cup light brown sugar
- 1/4 cup granulated sugar (or natural granulated sweetener)
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2/3 cup all-purpose flour (or plain four)
- 1/8 teaspoon baking soda
- Pinch salt
- 1/3 cup dark/semi-sweet chocolate chips , divided (I use Lily's Baking Chips)
Warm Brussels Sprout Salad with Pomegranate Seeds

Step 1 In large bowl, whisk together oil, vinegar, mustard, honey, cumin, salt and pepper; set aside
- 1/4 cup olive oil
- 3 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1/2 tsp ground cumin
- salt and cracked black pepper to taste
- 1 1/3 lb Brussels sprouts
- 1/3 cup pomegranate seeds
- 2 ½ oz soft goat or feta cheese, crumbled 75 g
- finely chopped fresh parsley, to garnish (optional)
Indian Marinade (C1)

- 1/4 cup plain lowfat yogurt
- 1/4 tsp turmeric
- 1/4 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp finely chopped parsley
- 1/4 tsp dried mint
- Salt and pepper to taste
