  • 1 - 6 lb. beef roast, such as prime rib, standing rib, or top sirloin
  • 1 clove of garlic
  • Salt and Pepper to taste

Step 1



1. Preheat oven to 500deg. Rub roast with garlic and sprinkle with salt and pepper.
2. Place roast in preheated oven. Roast for 30 minutes and then run off the heat. Do not open the oven door for exactly 2 hours, then open it and remove the roast.
3. Allow the roast to stand 15 minutes before carving for easier slicing.
4. Thirty minutes roasting time will make a RARE roast, If you wish more well-done meat, roast for 33 or 34 minutes at 500deg.before turning heat off. The general rule is: 5 minutes per pound for rare and 5 ½ to 6 minutes to the pound for more –will done meat.
