Meat Sauce

Directions In a large pot over medium-high heat, brown the ground beef and sausage until totally browned
- 3 pounds ground beef (I used ground round)
- 2 pounds sausage
- 3 tablespoons olive oil
- 2 large yellow onions, diced
- 2 green bell peppers, seeded and diced
- 6 cloves garlic, minced
- 1 cup white wine or stock (your choice)
- Two 28-ounce cans crushed tomatoes
- One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
- One 15-ounce can crushed tomatoes
- One 6-ounce can tomato paste
- 2 tablespoons sugar
- 2 teaspoons kosher salt
- 1 teaspoon ground oregano
- 1 teaspoon ground thyme
- 1/4 teaspoon crushed red pepper, optional
- 4 bay leaves
- 1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
- 1 whole rind from 1 wedge Parmesan, optional
- 1/2 cup grated Parmesan, optional, plus more for serving
- 2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
- Garlic-cheese bread, for serving
Spaghetti squash with ground beef.

Preparation: Cut spaghetti squash in half lengthwise and scoop out seeds
- Ingredients:
- • 1 small spaghetti squash
- • 1/2 cup water
- • 1 pound ground beef
- • 1/2 cup chopped onion
- • 1/2 cup chopped red bell pepper
- • 1/4 cup chopped green bell pepper
- • 1 clove garlic, minced
- • 1 can (14.5 ounces) diced tomatoes with liquid
- • 1/2 teaspoon leaf oregano
- • 1/4 teaspoon salt
- • 1/8 teaspoon pepper
- • 2 1/2 cups shredded Cheddar cheese
Beer Bread

This bread is incredibly delicious and so simple
- TOPPING:
- 3 cups all-purpose flour
- 1 1/2 tsp. salt (Some people like sea salt)
- 1 1/2 tbsp. baking powder (1 tbsp plus 1 1/2 tsp.)
- 3 tbsp. sugar
- 1/2 tsp. oregano or basil or cracked rosemary (optional)
- 1 12-oz. bottle beer,room temperature
- 1/2 stick butter (1/4 cup)melted
- 1/4 tsp. granulated gharlic powder, (optional)
FANTASY FUDGE

Combine sugar, margarine, and milk in heavy 2 ½ qt
- 3 cups sugar
- ¾ cup margarine
- 2/3 cup (5 1/3 oz. can) evaporated milk
- 1 (12 oz.) pkg. semi-sweet chocolate pieces
- 1 (7 oz.) jar Kraft Marshmallow Crème
- 1 cup chopped nuts
- 1 tsp. vanilla
PUMPKIN SPICE BREAD

Heat oven to 350 deg. In a large mixing bowl, combine pumpkin, sugar, water, vegetable oil and eggs
- 2 cups canned pumpkin
- 3 cups sugar
- 1 cup water
- 1 cup vegetable oil
- 4 eggs
- 3 1/3 cups all-purpose flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
