Tangy Plum Sauce

Combine the plum sauce, vinegar, brown sugar, and salt in a medium bowl
- 1/2 cup prepared Chinese-style plum sauce
- 1 tablespoon white vinegar or freshly squeezed lemon juice
- 1 teaspoon light-brown or dark-brown sugar
- 1/4 teaspoon salt

Turkey Tortilla Soup

Heat the 1 tablespoon of oil in a medium saucepan over medium heat
- 1 tablespoon vegetable oil
- 1 1/2 to 2 cups vegetable oil (for frying tortilla strips)
- 1/2 cup yellow onion, finely diced
- 1 1/2 tablespoons chili powder
- 1 tablespoon tomato paste
- 1 quart homemade turkey or chicken broth
- 6 sprigs cilantro
- kosher salt
- 3- 6 inch corn tortillas, cut into 1/4 inch wide strips
- 1 cup shredded or diced leftover turkey
- 3/4 cup tomato, diced
- 1/2 cup fresh cooked corn kernels
- 1/2 cup black beans, drained and rinsed
- 1 ripe avocado, diced
- 1/4 cup queso fresco or feta cheese, crumbled

Turtle Cake

- 1 box (18-19 ounces) German chocolate cake mix
- 1 bag (14 ounces) caramels, unwrapped
- 1 small can (5 ounces) evaporated milk
- 2 tablespoons butter
- 1 bag (12 ounces) semi-sweet chocolate chips
- 1 cup chopped pecans

- For the Soup:
- 6 cups chicken stock
- 2 cups fresh baby spinach leaves
- 1/4 cup chopped green onion
- 1/3 cup chopped fresh cilantro leaves
