1. Preheat oven to 425. Coat 12 cup muffin pan with non stick spray 2
- 3/4 cup + 2 tbsp oats
- 1 cup buttermilk
- 1 1/4 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 2/3 cups walnuts
- 1/3 cup canola oil
- 1 egg
- 1/3 cup brown sugar subsitute
- 1 tsp vanilla
Mozzarella Chicken

1. Preheat oven to 350 degrees F (175 degrees C)
- 4 skinless, boneless chicken breasts 1/4 cup butter salt and pepper to taste
- 4 slices mozzarella cheese
- 1 egg, beaten
- 2 cups all-purpose flour for coating
- 1 cup seasoned dry bread crumbs
- 1/4 cup butter
- 2 teaspoons minced garlic
- 1 cup dry white wine
Crab Quiche

Chicken Parmesean Sandwhiches

1. Put chicken on bottom of slow cooker 2
- 29 ounces canned tomato sauce
- 14.5 ounces canned petite diced tomatoes
- 12 ounces canned tomato paste
- 2 cups sweet yellow onion, finely diced
- 1 tablespoon garlic, finely chopped (about 2 cloves)
- 1/2 teaspoon dried parsley leaves
- 1/2 teaspoon dried oregano leaves
- 2 bay leaves
- 4 tablespoons fresh basil, finely chopped (about 6 leaves)
- 3-4 large THAWED/FRESH boneless, skinless chicken breasts
- sliced or shredded mozzarella cheese
- grated parmesan cheese
- 4-6 hard rolls
