Peanut Butter Cup Banana Bread

Preheat oven to 350 degrees F
- 1 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup of softened butter
- 3/4 cup of sugar
- 3 medium very ripe bananas, mashed
- 2 eggs
- 1 tsp vanilla
- 1/2 cup of milk
- 1/4 cup of fat free vanilla yogurt
- 1 1/4 cup chopped Reese’s Peanut Butter cups
- 1/3 cup chopped Reese’s peanut butter cups for topping
Egg Muffins

Preheat Oven 425 Spray a muffin/cupcake pan with non-stick spray
- Non-stick spray.
- Any kind of veggies you want: ham & broccoli, chicken & carrots, spinach with feta & tomatoes, steak & bell peppers....whatever you have in the fridge. (Note: add all veggies RAW - they will cook to perfection during the baking process)
- Cheese of your choice (shredded or sliced)
- Seasonings of your choice

Clean Eating Slow Cooker Italian Chicken

Mix all ingredients (except chicken) together and blend for about 30 seconds until ingredients are mixed well
- 4 lbs. boneless, skinless chicken breasts
- 5 medium tomatoes, chopped
- 1 onion, chopped
- 3 T. garlic, minced
- 2 T. tomato paste
- 2 T. olive oil
- 1 T. honey
- 2 T. Italian Seasoning
- 1 T. red pepper flakes
- 1 tsp. sea salt
- 1 tsp. black pepper
Gorgonzola and Fontina Nachos with Fennel and Mint

Position a rack 6 inches from the broiler element and heat the broiler on high
- 8 oz. tortilla chips (preferably unsalted or lightly salted)
- 10 oz. coarsely grated fontina (2-1/2 cups)
- 5 oz. crumbled Gorgonzola (1 cup)
- 2 tsp. fennel seeds
- 2 Tbs. chopped fresh mint
CRACK POTATOES

Combine first 4 ingredients, mix in hash browns
- 2 (16oz) containers sour cream
- 2 cups cheddar cheese, shredded
- 2 (3oz) bags real bacon bits (I use Real BACON!...!!)
- 2 packages Ranch Dip mix
- 1 large bag frozen hash brown potatoes
Cancer-Fighting BBQ Beans and Pasta

Cook the pasta. Add beans and corn
- 1 lb whole wheat pasta
- 1 can yellow corn
- 1 can black beans
- 1 can pinto beans
- 1/2 bottle of BBQ sauce
- 1/2 bottle of enchilada or red sauce

- 4-1/2 to 5 lb. English-style beef short ribs (8 to 12 ribs)
- 3 Tbs. vegetable oil
- Kosher salt
- Ground black pepper
- 2/3 cup medium-diced carrots
- 2/3 cup medium-diced onions
- 2/3 cup medium-diced fennel
- 1 Tbs. chopped fresh thyme
- 1 Tbs. finely chopped garlic
- 1 to 2 tsp. paprika
- 1 to 2 tsp. ground coriander
- 1/2 tsp. minced anchovies
- 1-1/2 cups dry red wine
- 1 cup canned crushed tomatoes
- 1/2 cup lower-salt beef broth
- 1 to 2 Tbs. chopped fresh parsley

- 1 cup chopped onion
- 1 can (10 3/4 ounces) condensed golden mushroom soup
- 1 can (10 3/4 ounces) condensed cream of onion soup
- 1 jar (6 ounces) Green Giant® sliced mushrooms, drained
- 1/4 teaspoon pepper
- 1 package (8 ounces) cream cheese, cubed
- 1 container (8 ounces) sour cream
- 6 cups hot cooked noodles or rice
Cornish Game Hens with Pomegranate Molasses

- 4 Cornish game hens, split, spine and wing tips removed
- Extra-virgin olive oil
- Kosher salt
- 1 bottle (12 fluid ounces) pomegranate molasses
- 2 cloves garlic, smashed
- 1/2 cup chicken stock
- 2 tablespoons sliced scallion greens, cut thin on the bias, for garnish
