The Best Spanish Rice Ever

Saute rice, onions and peppers in oil until veggies are tender
- 1 cup uncooked rice
- 1/3 cup chopped onion
- 2 Tbs olive oil
- 1/3 cup chopped green peppers
- 1 cup water
- 1/2 tsp mustard
- 2 cups chopped canned tomatoes
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp Worcestershire sauce
- 4-6 pieces bacon, cooked and crumbled
Biscuits & Gravy Casserole

Preheat oven to 350 degree's
- 1 pound sausage
- 1 1/2 ounces pork gravy mix ( 1 package of Pioneer Brand Peppered Sausage Gravy Mix )
- 1 cup cheddar cheese, shredded
- 6 eggs
- 1/2 cup milk
- to taste salt
- to taste black pepper
- 1 Can (8 oz) biscuits ( 1 can Pillsbury Grands Biscuits )
CREAMY AVOCADO CITRUS SALAD DRESSING

Add all to food processor or blender and whiz up about a minute or until smooth and creamy
- 1 ripe avocado
- 1/4 cup apple cider vinegar
- 1/4 . cup honey
- 3 tablespoon lime juice
- 1 clove garlic
- 1/4 cup cilantro
- 1/2 small jalapeno (or your preference)
- 1/4 cup water or more, to thin to preference
- Salt and pepper, to taste
Avocado Shaved Brussels Sprout Salad with Honey Ginger Vinaigrette

- VINAIGRETTE:
- 1/2 cup rice vinegar
- 1/4 cup canola oil
- 1 teaspoon sesame oil
- 1/2 teaspoon sea salt
- 1/3 cup honey
- 1 1/2 teaspoon fresh ginger, grated or finely minced
- 1 teaspoon Sriracha chili sauce
- SALAD:
- 3 cups Brussels sprouts, shaved
- 2 cups cabbage, shredded
- 6 green onions, thinly sliced on a diagonal
- 1/2 cup dried cranberries, roughly chopped
- 3 ripe, fresh California avocados, seeded, peeled and diced into 1/2-inch pieces
- 1 cup fresh cilantro leaves, optional
- 2 tablespoons sesame seeds
