- 1/4 cup silver tequila
- 1/4 cup peach liqueur (recommended: Creme de Peche)

- 4 cups water
- 1 lb boneless, skinless chicken breast halves
- Salt to taste

- 1 tsp fresh oregano
- 1 tsp chives chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 16 soft corn tortillas

Mustard Potato Cakes

Preheat the oven to 200 degrees F
- 2 1/2 pounds red potatoes, scrubbed and cubed
- 1/4 cup freshly grated Parmesan
- 1/4 cup light sour cream
- 2 heaping tablespoons whole-grain Dijon mustard

- 1 egg, lightly beaten
- Kosher salt and freshly ground black pepper

Homemade Almond Milk

The following recipe makes about 1 quart of almond milk
- 1 cup of raw organic almonds, soaked in filtered water for at least 4 hours (I soak them overnight) to soften them
- 4 cups of water (you can adjust the water to make a thicker or thinner milk).

- 16 ounces 1/2"-thick rounds sweet potatoes
- 1 teaspoon olive oil
- 1/8 teaspoon sea salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon cayenne, or to taste
- 2 ounces finely shredded all-natural,
- Reduced Fat Sharp Cheddar Cheese)
- 4 teaspoons all-natural bacon bits
- 4 teaspoons finely chopped scallions
- 2 tablespoons fat-free Greek yogurt (optional)
Pinto Bean Pie
