Sweet Onion, Tomato & Cuke Salad Recipe

In a large bowl, combine the tomatoes, cucumbers and onion
- 3 large tomatoes, chopped
- 3 large cucumbers, peeled, halved, seeded and sliced
- 1 large sweet onion, halved and thinly sliced
- 1/2 cup olive oil
- 3 tablespoons mayonnaise
- 2 tablespoons rice vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup crumbled feta cheese
Spaghetti alla Carbonara

Set a large pot of water over high heat for the spaghetti
- 2 tbsp olive oil
- 1/3 cup diced pancetta or bacon
- 3 egg yolks
- 1/2 cup freshly grated parmesan
- 3/4 tsp black pepper
- 1 tsp salt
- 1/2 lb spaghetti
- 1/4 cup reserved pasta water
Chinese Cole Slaw

1. Chop cabbage and scallions; set aside 2
- 1 med. Head Cabbage
- 4 – 6 Scallions
- ½ cup Oil
- ½ cup Sesame Seeds
- ½ cup Slivered Almonds
- 2 pkgs Ramen Chicken Noodles ( uncooked)
- Dressing
- ¾ cup Oil
- 2 tbs Soy sauce
- 1/2 cup Brown Sugar
- 2 tbs Vinegar

Chow Mein Chicken Salad Recipe

In a large salad bowl, combine the lettuce, chow mein noodles, chicken, onions, almonds and sesame seeds
- VINAIGRETTE:
- 4 cups shredded lettuce
- 1 cup chow mein noodles
- 2/3 cup cubed cooked chicken breast
- 2 green onions, chopped
- 4 teaspoons sliced almonds, toasted
- 4 teaspoons sesame seeds, toasted
- 1/4 cup canola oil
- 4-1/2 teaspoons white wine vinegar
- 1 tablespoon sugar
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Creamy Pasta Primavera Recipe

Cook pasta according to package directions
- 2 cups uncooked gemelli or spiral pasta
- 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
- 3 medium carrots, cut into strips
- 2 teaspoons canola oil
- 2 cups cherry tomatoes, halved
- 1 garlic clove, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy whipping cream
- 1/4 teaspoon pepper
Buffalo Dip - Maureen

Mix all ingredients together Put in 1 qt baking dish or pie plate Bake at 350 for 20 minutes
- 8 oz cream cheese
- 1/2 cup ranch or clue cheese dressing
- 2 cups shredded cooked chicken

Mini Buffalo Chicken Bisquick Pizzas

1 Heat oven to 350°F. Spray cookie sheet with cooking spray
- 1 1/2 cups Original Bisquick® mix
- 1/3 cup hot water
- 1 tablespoon olive oil
- 1 cup shredded cooked chicken
- 1/4 cup buffalo wing sauce
- 1 tablespoon butter, melted
- 1 cup shredded Monterey Jack cheese (4 oz)
- 1/2 cup crumbled blue cheese (2 oz)
- 2 green onions, thinly sliced
Jello Whip

Dissolve jello in boiling water stir in 2 cups 7 up chill for about an hour add cool whip and mix with a beater
- 2 boxes jello ( any flavor)
- 2 cups boiling water
- 2 cups 7 up
- 1 container cool whip
Buffalo Chicken Dip

Pre-heat oven to 350. Cook chicken and dice
- 3 boneless chicken breasts (I used about a lb of tenders)
- 4-8 -4-8oz Franks Hot Sauce
- 1/2 -1/2 cup Ranch Dressing
- 2 -2 cups shredded cheddar cheese
- 12-18 -12-18oz cream cheese
- -Celery or crackers
