Cavatappi with Spinach, Beans, and Asiago Cheese

- 8 cups coarsely chopped spinach leaves
- 4 cups hot cooked cavatappi (about 6 ounces uncooked spiral-shaped pasta)
- 1/2 cup (2 ounces) shredded Asiago cheese
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 (19-ounce) can cannellini beans or other white beans, drained
- 2 garlic cloves, crushed
- Cracked black pepper (optional)
Wilted Greens with Warm Bacon Dressing

- 1/2 cup shelled green peas
- 6 cups gourmet salad greens (about 1/4 pound)
- 1/2 cup thinly sliced green onions
- 4 turkey bacon slices, diced
- 1/4 cup water
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh lemon juice
- Coarsely ground pepper (optional)

Mix all ingrediants together and bake at 350 for 45-60 minutes

- 1 cup lowfat 2% milk
- 1 Cup cheddar cheese, shredded

- 3 slices bacon
- 1 tablespoon olive oil
- 1 whole shallot, chopped
- 1 1/2 pounds brussels sprout
- 1 cup chicken broth

- 10 ounces (2 1/2 sticks) pareve margarine or 1 pound (2 sticks) butter

- 1/4-1/2 cup water

- Filling:
- 1 1/2 cups roughly ground walnuts
- 1 teaspoon cinnamon

Antipasto Platter with Prosciutto di Parma and Fruit

Preheat broiler. In a small bowl, combine olive oil, garlic and pepper
- 3 tablespoons olive oil
- 1 small clove garlic crushed
- 1/8 teaspoon ground black pepper
- 8 thin slices Italian bread
- 8 thin slices Prosciutto di Parma (about 4 ounces)
- 3 cups assorted fruits, such as peaches, nectarines, plums and melons cut in wedges
- 1 cup olives (preferably imported)
- Roasted red and yellow bell peppers

- 1/2 cup water
- 2 tablespoons granulated sugar
- 2 tablespoons instant espresso granules
- 2 tablespoons Kahlúa (coffee-flavored liqueur)
- Filling:
- 1 (8-ounce) block fat-free cream cheese, softened
- 1 (3.5-ounce) carton mascarpone cheese
- 1/3 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 tablespoons Kahlúa
- Remaining ingredients:
- 24 cakelike ladyfingers (2 3-ounce packages)
- 1 1/2 teaspoons unsweetened cocoa
- 1/2 ounce bittersweet chocolate, grated
