Lemon Monkey Bread

1. Cut rolls in half and place in a greased 9×13″ pan
- Glaze:
- 12 Rhodes dinner rolls, thawed but still cold
- zest of 1 lemon
- 1/2 cup sugar
- 3 tablespoons butter, melted
- 1/2 cup powdered sugar
- 1 Tbsp lemon juice
Apple Grape Salad

Preparation 1.Mix orange juice and mayonnaise 2
- Ingredients
- 1 cup fresh pineapple chunks
- 2 tablespoons pineapple juice
- 1 large Red Delicious apple, cored and cut into chunks
- 1 large Granny Smith apple, cored and cut into chunks
- 1 cup red or green grapes, or combination of both
- 1/2 cup dried cranberries
- 1/2 cup sliced celery
- 1/2 cup chopped pecans
- 1/4 cup orange juice
- 3/4 cup reduced or low fat mayonnaise (add more if needed)
Asparagus Mushroom Bake

Melt 2 tablespoons (25 ml) butter in a large skillet

- 25 ml butter 2 tbsp
- 1 L mushrooms, sliced 4 cup
- 250 ml onion, chopped 1 cup
- 45 ml butter 3 tbsp
- 45 ml flour 3 tbsp
- 5 ml chicken bouillon 1 tsp
- 2 ml nutmeg 1/2 tsp
- 1 ml salt 1/4 tsp
- .5 ml pepper 1/8 tsp
- 250 ml milk 1 cup
- 1 kg asparagus, trimmed & cut into thirds 2 lb
- 7 ml lemon juice 1 1/2 tsp
- 125 ml soft bread crumbs 1/2 cup
- 15 ml butter 1 tbsp
Apple Oven Pancake

1 Heat oven to 450°F. In oven, melt butter in 10-inch ovenproof or cast-iron skillet, about 2 minutes
- 3 tablespoons butter or margarine
- 4 medium cooking apples, peeled, thinly sliced (about 6 cups)
- 1/4 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 1 1/2 cups Original
- Bisquick® mix
- 1/4 cup granulated sugar
- 1 cup buttermilk
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla
- 2 eggs
- 1 tablespoon cinnamon-sugar
- Maple-flavored syrup, if desired
Tacos - chorizo, cheese (The Chew)

In a large sauté pan, add 1 tablespoon of olive oil and place over medium-high heat
- EGG & CHEESE TACOS WITH CHORIZO & PINTO BEANS
- 2 tablespoons olive oil (divided)
- 8 ounces fresh chorizo (removed from casing)
- 1/2 red onion (thinly sliced)
- 1 fresno chili (seeds removed, finely chopped)
- 1/4 teaspoon red chili flakes
- 1 can pinto beans (drained and rinsed, 15 ounces)
- 6 eggs
- 2 tablespoons half-and-half
- 1 teaspoon hot sauce (plus more to garnish)
- 1 bunch cilantro
- 12 white corn tortillas (charred slightly on a griddle)
- 1 cup cotija cheese (crumbled, plus more for garnish)
- 1 recipe Tomatillo Salsa
- 1 cup pickled jalapenos
Blueberry Compote

In saucepan, combine 1 c blueberries, water, lemon juice & sugar
- 1/4 C Sugar
- 2 TBLS water
- 1/2 TBLS fresh lemon juice
- 2 C blueberries
- 1 tsp vanilla
Butterfinger Pie

Mix first three ingredients together
- 6 (2 1/8 ounce) butterfinger candy bars, crushed
- 1 (8 ounce) package cream cheese
- 1 (12 ounce) carton Cool Whip
- 1 graham cracker crust
Swiss Steak

Preheat oven to 350°F (180°C)
- 2 tbsp olive oil (30 mL)
- 21/2 lbs rib-eye, grass-fed steak (1.1 kg)
- 1/2 cup flour
- 1 tsp salt (5 mL)
- 1 tsp black pepper (5 mL)
- 1 onion, sliced into rings
- 1 carrot, thinly sliced
- 14.5 oz canned, diced tomatoes (411 g)
- 1 cup water (250 mL) (add 1 /12 cups water - better!)
- 2 tbsp tomato paste (30 mL)
- 1 tsp crushed garlic (5 mL)
- 1/4 tsp seasoning salt (1 mL)
**Pot Roast

Season roast with s&p and coat with 1/4 C flour
- 3 - 3 1/2 lb roast
- 1/4 C flour
- 2 TBLS oil
- 1 lg onion, diced
- 4 cloves garlic, sliced
- 1/2 bunch celery, thick sliced
- 3-4 fresh thyme sprigs or 1 1/2 tsp dried
- 3 TBLS tomato paste
- 3/4 C chicken broth
- 2 C au jus (from mix)
- 1/2 tsp each salt and pepper
- 1/2 tsp crushed red pepper
- 1/4 C flour
- 1 1/2 C water
Greek Chicken

Spray the bottom of a baking dish or pan with oil and place the chicken on the bottom
- 4-6 boneless, skinless chicken breasts
- One red onion, sliced
- Greek Salad dressing (I used the Santa Lucia brand but others would work)
- Feta Cheese – about 6 oz. or more if desired
