Chocolate Dream Pie

Cheddar-Corn Spoon Bread

- 1 tablespoon butter, plus more for baking dish
- 2 cups milk
- 1 1/2 cups corn kernels
- 2/3 cup yellow cornmeal
- Coarse salt
- Pinch of cayenne pepper
- 1 cup sharp white cheddar cheese
- 4 large eggs

Sweet Corn Frittata

WHISK the eggs in a large bowl
- 8 large omega-3 eggs
- 4 oz low-fat Swiss cheese, grated (about 1 c)
- 1 1/2 c frozen corn
- 1 1/2 c grape tomatoes, halved
- 6 scallions, chopped (about 1/3 c)
- Pinch of dried thyme
German Pancakes

Preheat oven to 400 degrees F
- Ingredients:
- 6 eggs
- 1 cup milk
- 1 cup flour
- dash of salt
- 1 tsp vanilla
- 5 Tbs butter
- Directions:
- Preheat oven to 400 degrees F. As oven preheats, put the butter in an un-greased 9×13-in. baking dish and place in oven, just until melted.
- Place the eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish. Bake, for 20 minutes or until edges are golden brown and puffy.
- When done, sprinkle generously with powdered sugar and syrup. Enjoy!
Chocolate Hazelnut No-bake cookies

- 1/2 cup toasted chopped hazelnuts
- 2-1/3 cups quick oatmeal
- 1 (14-oz) can sweetened condensed milk
- 1-1/4 cup semisweet chocolate chips
- 1/3 cup chocolate hazelnut spread
- 1 tsp vanilla extract

- 1 stick butter - melted
- 1 cup flour
- 1 1/2 cup pecans - chopped (reserve 3/4 cup for topping)
- 1 16 oz. container Cool Whip
- 8 oz. cream cheese - softened
- 1 cup sugar
- 2 boxes Lemon Instant Pudding - regular size (made to directions and refrigerated)
Penne w/ Spinach, Artichokes and Cherry Tomatoes

Cook pasta as directed on box, without salt and oil
- 1 pound Whole wheat penne
- 1/8 cup Extra virgin olive oil
- For the Vegetables
- 2 tbs Extra virgin olive oil
- 16 ounces Fresh spinach, washed and stem ends removed
- 1 pint Cherry tomatoes, washed and halved
- 8 ounces Artichoke hearts
- 1/2 cup Crumbled feta cheese
- 1/4 cup Fresh basil, chopped
Kentucky Burgoo

In a large stockpot, mix all ingredients together

- Yield: 8 quarts
- Ingredients
- 4 - 5 cups chopped, cooked turkey, beef and pork (Can use 1 or all 3 - either way is good)
- 3 cups beef broth
- 1 large can (approximately 2 quarts) vegetable juice
- 1 large can (approximately 28 ounces) crushed tomatoes
- 2 medium onions, chopped
- 2 stalks celery, chopped
- 4 carrots, peeled and sliced
- 4 medium potatoes, peeled and cubed
- 1 green bell pepper, seeded and chopped
- 1 small head cabbage, chopped
- 1 bag (1 pound approximately) frozen lima beans
- 1 bag (1 pound approximately) frozen okra
- 2 cans (approximately 14 ounces each) corn
- 1 cup prepared steak sauce
- 1/2 cup Worcestershire sauce (more or less to taste)
- Prepared hot pepper sauce to taste
- 2 teaspoons black pepper
- Salt if needed

- 8 8 8 cup low sodium beef broth
- 2 2 2 cup water
- 4 4 4 Tbsp tomato paste
- 1 1 can 1 (14.5-oz) can fire roasted diced tomatoes with garlic
- 1/2 1/2 1/2 lb Ditalini pasta
- 2 2 2 Tbsp chopped Italian parsley
- 2 2 2 Tbsp chopped basil

- 9pm. to makes me think of family, food, fun and resolutions.Growing up, we always had a huge Italian dinner on New Year’s Day–it lasted from noon until 9pm. Appetizers, dinner and dessert with so many leftovers we would all enjoy for days to come.

- 1/2 c 2% Greek-style yogurt
- 1 Tbsp dill pickle relish
- 1 1/2-2 tsp fresh lemon juice
- 1 clove garlic, minced
- 1 1/2 lb sweet potatoes (skins scrubbed well), cut into 4" × 1" pieces
- 1 Tbsp + 2 tsp salt-free Southwest seasoning
- 1 c panko bread crumbs
- 1 lg egg, beaten
- 1 lb tilapia fillets, cut into 8 equal pieces
