Lemon-Berry Shortcake

Directions •In a large bowl, combine the flour, sugar, baking powder and salt

- 1-1/3 cups all-purpose flour

- 1/4 teaspoon salt
- 1 egg
- 2/3 cup buttermilk
- 1/4 cup butter, melted
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1 teaspoon vanilla extract
- 1 cup sliced fresh strawberries
- 1-1/2 cups sliced fresh strawberries
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 2 cups reduced-fat whipped topping
Poached Salmon

Combine Ingredients and Simmer For the first step we want to take our knife and crush the garlic
- 6 oz. salmon fillet (For demonstration purposes I am using one portion of salmon. You can cook as many as four at a time.)
- 8 oz. white onions (sliced)
- 3 oz. of carrots (peeled & sliced)
- 1/2 bunch parsley stems
- 8 sprigs thyme
- 4 cloves garlic
- 1 tbl. peppercorns

Spicy Orecchiette with Broccoli

Directions 1. In a large pot of boiling salted water, cook pasta until al dente
- Coarse salt and ground pepper
- 12 ounces orecchiette or other short pasta
- 2 tablespoons olive oil
- 2 garlic cloves, thinly sliced
- 1/4 to 1/2 teaspoon red-pepper flakes
- 1 head broccoli (about 1 pound), cut into bite-size florets, stalks peeled and thinly sliced
- 1/2 cup grated Parmesan
Fried Brown Rice with vegetables

Combine rice and broth in a small saucepan
- 1 cup instant brown rice
- 1 cup vegetable broth
- 2 eggs, lightly beaten
- 2 teaspoons canola oil
- 6 ounces asparagus spears, trimmed and cut into 1-inch pieces (about 1/2 bunch)
- 1 medium red bell pepper, thinly sliced into 1-inch pieces
- 4 scallions, cut into 1-inch pieces
- 1 clove garlic, minced
- 1 tablespoon minced fresh ginger
- 4 teaspoons reduced-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon toasted sesame oil
- Hot red pepper sauce, to taste

In a skillet, over medium heat, saute mushrooms and onion in butter for 5 minutes
