In medium bowl, mix together pretzels 1/2 cup sugar and melted butter
- 1/2 cup sugar
- 1/2 cup butter, melted
- 1 cup fine crushed pretzels
- 1/2 cup sugar
- 8 oz cream cheese, at room temp
- 8 oz cool whip
- 2 TBS cornstarch
- 1/4 cup sugar
- 8 oz can crushed pineapple, drained with juice reserved
Wonton Soup

Place broth and cabbage in a large saucepan and set pan over medium-high heat
- 6 cups reduced-sodium chicken broth
- 1 cup shredded cabbage
- 1/2 cup shredded or diced cooked pork
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 16 wonton wrappers
- 1/4 cup chopped scallions
Apricot-Glazed Pork Medallions

Season both sides of pork with salt and black pepper
- 1 pound pork tenderloin, cut crosswise into 1/2-inch thick rounds
- Salt
- Ground black pepper
- 2 teaspoons sesame oil
- 1 1/4 cups apricot preserves
- 1/4 cup tamari sauce
- 1 tablespoon chopped pickled ginger
Crockpot Refried Beans

Place all ingredients into crockpot and cook on high for 8 hours, adding more water if necessary
- 1 onion, diced
- 3 cups dry pinto beans
- 1/2 fresh jalapeno, seeded and chopped
- 2 TBS minced garlic
- 5 tsp salt
- 1 3/4 tsp black pepper
- 1/8 tsp ground cumin
- 9 cups water
Eggs Benedict

Mash potatoes until smooth
- Holendase sauce:
- 1 lb breakfast sausage browned drained set aside
- 2 lbs prebaked russet potatoes, cooled scoop out center and mash until smooth
- 14 cup parmesan cheese
- 1/4 cup sour cream
- 1/4 cup panko
- 4 eggs, whisked
- panko
- fresh parsley, chopped
- salt and pepper
- 3 egg yolks
- 1 1/2 tsp dijon mustard
- 2 TBS heavy cream
- 2 sticks butter, melted
- 1/4 tsp cayanne pepper
- 1/2 lemon juiced

Spinach Tostadas

Preheat the oven to 250 degrees F
- For the topping:
- 2 (10-ounce) packages frozen spinach, thawed
- 1 tablespoon finely diced red bell pepper
- 1 teaspoon finely diced serrano pepper
- 4 cloves garlic, minced
- 2 large eggs
- 1/3 cup panko bread crumbs
- 1/3 cup grated Parmesan
- 1 teaspoon freshly cracked black pepper
- 1/2 teaspoon salt, plus more for sprinkling
- 1/4 teaspoon cayenne
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons sour cream
- 1/2 teaspoon lime zest
- 1 tablespoon finely diced shallot
- 3 Roma tomatoes, seeded and diced
- 2 russet potatoes, cooked in boiling salted water until just fork tender, then cut in 1/2-inch dice

Mix oil, bbq seasoning, garlic and lemon juice in bowl and add potatoes
- yukon gold potatoes, cut into bite size pieces
- 3 TBS olive oil
- 1 TBS crushed garlic
- 2 tsp. lemon juice
- 2 tsp bbq seasonings
- 1 1/2 cup sour cream
- 2 TBS crushed bacon bits
- pinch chives
- dash tabasco
- 2 TBS balsamic vinegar
Ultimate Huevos Rancheros

In skillet toast chiles, seeds oragano until start to smoke
- Sauce:
- 1 dried anso chile
- 1 dried anaheim chile
- 2 dried chipotle chiles
- 1 TBS cumin seeds
- 1 TBS corriander seeds
- 1 TBS Mexican oregano
- 6 to 8 roma tomatoes
- 1 onion cut into chunks
- 3 garlic cloves
- 1/2 bunch cilantro
- olive oil
- salt and pepper
- 1 lime, juiced
- Beans:
- 2 links churizo, chopped
- 1 onion chopped
- 1 clove garlic, chopped
- olive oil
- 2 cans kidney beans, not drained
