Herb Crusted Roast Beef

Season all sides of roast with salt and pepper
- 3 lbs boneless rib eye round roast
- salt and pepper
- olive oil
- 5 garlic cloves
- 1 bunch parsley
- fresh rosemary
- oragano
- dry mustard
- red pepper flakes

Pot Roast with Vegetables

Season all sides of the beef with a fair amount of salt and pepper
- 1 (3 to 4 pound) piece beef chuck roast, trimmed of excess fat
- Kosher salt and freshly ground black pepper
- 3 tablespoons olive oil
- 1 can crushed tomatoes
- 1 cup water
- 2 yellow onion, halved
- 2 garlic cloves, chopped
- 1 bunch baby carrots
- 2 celery stalks, sliced
- 1 cup button mushrooms, stems removed and sliced in half
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 bay leaves
Super Sloppy Joes

Heat a large skillet over medium high heat
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 1/4 pounds ground beef sirloin
- 1/4 cup brown sugar
- 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 4 crusty rolls, split, toasted, and lightly buttered

Beef and Pork Chile

Brown bacon in hot skillet
- 1 lb. ground beef
- 1 lb. ground pork
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 slice bacon, browned and crumbled
- 1 cup beer
- 15 oz kidney beans, drained and rinsed
- 15 oz black beans, drained and rinsed
- 1 TBS oregano
- 3 TBS chile powder
- 1 TBS cumin
- 1 TBS paprika
- 1 TBS chipotle powder
- salt and pepper
- 24 oz crushed tomatoes
- 24 oz diced tomatoes
Grilled Shrimp with Spicy Tomato Horseradish Dip

Marinate shrimp in the olive oil, garlic and thyme for 1 hour
- 20 large shrimp, shells removed, deveined
- 2 tablespoons olive oil
- 1 tablespoon finely chopped garlic
- 1 teaspoon finely chopped fresh thyme
- Salt and freshly ground pepper
- 6 plum tomatoes, cut in half, seeds removed and grilled
- 2 tablespoons of prepared ketchup
- 1/4 cup fresh horseradish
- 2 tablespoon fresh lime juice
- 2 tablespoon fresh lemon juice
- Dash of hot pepper sauce
- 2 dashes of Worcestershire sauce

Fill a 6-quart pot 2/3 full of water; add the crab boil and mix until blended
- 1 package dry form crab boil (recommended: Zatarain's)
- 3 pounds red potatoes
- 1 pound thick-cut bacon, diced
- 1 cup diced red onion
- 1 tablespoon minced garlic
- 1/4 pound butter, at room temperature
- 1/4 pound finely shredded Cheddar
- 1 green onion, chopped
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
