Chicken Salad Stuffed Tomatoes

Whisk all dressing ingredients together
- Dressing:
- 1 rotisserie chicken, skinned, boned, and chopped
- 1/2 cup sliced roasted red peppers, drained
- 1/2 cup thinly sliced red onion
- 1/2 cup diced celery
- 1/2 cup toasted pine nuts
- 1/2 cup chopped fresh parsley plus 2 T for garnish
- 1 (4 oz) carton feta cheese with basil and tomato, reserve 2 T
- 1 T capers, drained
- 8 large tomatoes, cored and drained upside down
- 1/2 cup dijon mustard
- 1/2 cup olive oil
- 1/4 cup honey
- 1 t garlic powder
- 1 T italian seasoning
- crushed black pepper
Fruit Dip

Combine creme and cream cheese
- 1 7 oz jar marshmallow creme
- 1 8 oz pkg cream cheese, softened
- 1/4 t ground ginger
- 1 T grated orange peel
Crustless Quiche

Grease a 9x9 pan Mix all ingredients except Monterey Jack cheese
- 1/4 cup melted butter
- 1/2 cup flour
- 6 eggs beaten
- 1 cup milk
- 2 cups small curd cottage cheese
- 8 oz softened cream cheese
- 1 t sugar
- 1 t baking powder
- 1 on Monterey Jack cheese, cubed

- 4 cups chicken broth
- 2 cups cooked chopped chicken
- 1 16-oz can diced tomatoes
- 1 apple, peeled and chopped
- 1/4 cup finely chopped onion
- 1/4 cup chopped carrot
- 1/4 cup chopped celery
- 1/4 cup green pepper
- 1 T snipped parsley
- 2 t lemon juice
- 1 t sugar
- 1 t curry powder
- 1/8 t ground cloves
