Stuffed French Toast

- 8 slices of bread, cubed
- 2 (8 oz) pkgs cream cheese, cubed
- 12 eggs
- 2 cups milk
- 1/2 cup maple syrup
Green Bean Casserole

Preheat oven to 350 Saute onion in butter with salt and sugar
- 3 cans french cut green beans, drained
- 2 T butter
- 1 small onion, diced
- 1 t salt
- 1 t sugar
- 1 8 oz carton sour cream
- 16 oz Italian blend shredded cheese
- 1 large can french fried onions
Pecan Tassies

Shells: Beat butter and cream cheese in mixing bowl until smooth
- Shell:
- 1/2 c butter or margarine, softened
- 1 3 oz pkg cream cheese, softened
- 1 cup flour
- Filling:
- 2 T butter or margarine
- 3/4 cup packed brown sugar
- 1 egg
- 1 t vanilla
- 1 1/2 cup chopped pecans
Stuffed Shells Florentine

In a bowl, combine the first 7 ingredients
- 1 cup ricotta or cottage cheese
- 1 cup mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 egg, slightly beaten
- 1 (10 oz) package frozen chopped spinach, cooked and well drained
- 1/2 t dried oregano
- 1/4 t salt
- 12 jumbo shell macaroni, cooked al dente, drained and cooled
- 1 jar spaghetti sauce
Lemon Buttermilk Pie

Combine all ingredients. Stir until well mixed
- 1 cup buttermilk
- 3/4 cup melted butter
- 3 eggs, beaten
- 1/4 cup lemon juice
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups sugar
- 2 T cornstarch
- 1 unbaked pie shell
Easy Energy Bars

Melt marshmallows, peanut butter, honey, margarine and cocoa together, stirring until marshmallows are melted
- 3 cups mini marshmallows
- 1/2 cup crunchy peanut butter
- 1/4 cup honey
- 4 T cocoa
- 3 T margarine
- 4 cups Rice Krispies cereal
- 1 t vanilla
Grandma's Green Jello

Dissolve jello with 2 1/2 c hot water and 1 cup pineapple juice
- 2 pkg lime jello (1 lg or 2 small)
- 1/2 pint whipping cream
- 1 pkg cream cheese
- can crushed pineapple
- 1/2 c nuts
- Maraschino cherries can be added for color
Italian Egg Drop Soup

Combine broth, water, pasta, chick peas, green onions and nutmeg in a large cook pot
- 6 cups chicken broth
- 2 cups water
- 1 1/3 cups whole wheat medium pasta shells
- 1 7 oz can chick peas, rinsed
- 1 bunch green onions, sliced
- Pinch of freshly grated nutmeg
- 3 + cups chopped arugula, any tough stems removed
- 4 large eggs, lightly beaten
- 2 T lemon juice
- Fresh ground pepper to taste
- Grated Parmesan cheese for garnish
Flour Tortilla Roll Ups

Combine 3/4 cup cream cheese and 1/4 cup salsa
- Flour tortillas
- Shredded cheddar cheese
- Chopped black olives
- Cream cheese
- Salsa
Chicken Breasts Diane

Place chicken breast halves between sheets of waxed paper or plastic wrap
- 4 large boneless chicken breast halves or 8 small
- 1/2 t salt
- 1/4 - 1/2 t black pepper
- 2 T olive oil
- 2 T butter or margarine
- 3 T chopped fresh chives or green onions
- Juice of 1/2 lime or lemon
- 2 T brandy or cognac
- 3 T chopped parsley
- 2 T dijon mustard
- 1/4 cup chicken broth
