Grilled Shrimp with Black Beans, Jicama, and Avacado

Heat a grill pan over high heat
- 1 lb large peeled deveined raw shrimp
- 1/2 t black pepper
- 3/4 t kosher salt, divided
- olive oil cooking spray
- 5 T olive oil
- 1/4 cup fresh lime juice
- 2 T honey
- 3 oz baby arugula (5 cups)
- 3 cups matchstick cut jicama
- 1/2 cup loosely packed fresh cilantro leaves
- 1 15 oz can no salt added black beans, drained and rinsed
- 1 ripe avacado, peeled, pitted, and cut into wedges
- 1/4 cup roasted pepitas (pumpkin seeds)
- Tajin seasoning or smoked paprika
- Lime wedges for serving
Chicken Saltimbocca

Place chicken breasts between pieces of plastic wrap and pound to 1/4 inch thickness
- Boneless chicken breasts
- Pepper
- Sage
- Thin sliced prosciutto
- Flour
- Olive Oil
- Butter
- Marsala
- Arugula
Pork Roast and Bacon

Preheat oven to 350 In small bowl, mix together the mustards, honey, garlic, and rosemary until smooth
- 1/4 cup dijon mustard
- 2 T whole grain mustard
- 2 T honey
- 2 garlic cloves, minced
- 2 T chopped fresh rosemary
- 1 (3.5 lb) center cut boneless pork loin roast
- 12 slices bacon
- Kitchen twine
Baked Crab Dip Bread Bowl

Melt the cheeses then add the other ingredients
- 2 jars Old English cheese
- 1 (8oz) pkg cream cheese
- 1 T minced onion
- 1 clove garlic, minced
- 6 oz crab meat (1 or 2 cans)
- Sourdough bread loaf, hollowed out and insides sliced into cubes
Krusteaz Lemon Cheesecake Bars

Preheat oven to 350 Lightly grease a 8x8 pan Press the full pouch of crust mix firmly into the bottom of the pan
- 1 box Krusteaz Lemon Bar mix (crust and filling mix)
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 egg
- 1/2 t vanilla
- 1/3 cup water
- 3 eggs
Marinated Cheese

Cut cream cheese lengthwise and then slice horizontally into 1/4" squares
- Mix the following in a jar and shake well:
- 1/2 c olive oil
- 1/2 c white vinegar
- 3 T chopped fresh parsley
- 3 T minced green onions
- 3 cloves garlic, minced
- 1 (2 oz) jar diced pimentos, drained
- 1 t sugar
- 3/4 t dried basil
- 1/2 t salt
- 1/2 t pepper
- 1 8 oz block cream cheese
- 2 6 oz packages medium cheddar Cracker Cuts cheese
Beef Lombardi

Cook ground beef in skillet over med heat 5-6 min
- 1 lb lean ground beef
- 1 (14.5 oz) can chopped tomatoes
- 1 (10 oz) can diced tomatoes with green chiles
- 2 t sugar
- 2 t salt
- 1/4 t pepper
- 1 (6 oz) can tomato paste
- 1 bay leaf
- 1 (6 oz) pkg medium egg noodles
- 6 green onions, chopped (about 1/2 cup)
- 1 cup sour cream
- 1 cup (4 oz) shredded sharp cheddar cheese
- 1 cup (4 oz) shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- Garnish: fresh parsley sprigs
Orzo Vegetable Salad

- Dressing:
- 1/2 cup uncooked orzo pasta
- 3 plum tomatoes, chopped
- 1 cup marinated artichoke hearts, chopped
- 1 cup coarsely chopped fresh spinach

- 1/2 cup crumbled feta cheese
- 1 T capers, drained
- 1/3 cup olive oil
- 4 t lemon juice
- 1 T minced fresh tarragon OR 1 t dried tarragon
- 2 t grated lemon peel
- 2 t rice vinegar
- 1/2 t salt
- 1/4 t pepper
