Banana Bars

Good use of too ripe bananas
- Bars:
- 1 cup sugar
- 1 cup mashed very ripe bananas (2 medium)
- 1/3 cup vegetable oil
- 2 eggs
- 1 cup flour
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t ground cinnamon
- 1/4 t salt
- Frosting:
- 3 oz cream cheese
- 1/3 cup butter or margarine, softened
- 1 t vanilla
- 2 cups powdered sugar
Baked French Toast

Beat eggs and add milk and salt
- 1 loaf french bread, cut into 1 1/2" thick slices
- 1/2 cup soft margarine
- 2/3 cup brown sugar
- 3 eggs
- 1 cup milk
- 1/4 t salt
- cinnamon
Slow Cooker Chicken and Dumplings

Place chicke, butter, soup, and onion in a slow cooker and fill with enought WATER to cover
- 4 skinless, boneless chicken breast halves
- 2 T butter
- 2 (10.75) oz) cans condensed cream of chicken soup
- 1 onion, finely diced
- 2 (10 oz) packages refrigerated biscuit dough
Apple Crisp

Preheat oven to 375. Grease a 9 inch square baking dish and set aside
- 3 lbs apples (about 9)
- 2 T lemon juice
- 1/2 cup brown sugar
- 1/2 t cinnamon
- 1/2 t nutmeg
- 1/3 c flour
- 1/3 cup sugar
- 1/3 cup rolled oats
- 4 T cold butter
- 1/2 cup walnuts, chopped
Guacamole

Peel the avacados and mash with a fork
- 2 ripe avacados
- 1-2 garlic cloves
- 1/2 lime, the juice
- 3 T olive oil
- 1/2 white onion, grated or chopped finely
- 5 1/3 T fresh cilantro
- 1 tomato, diced
- salt and pepper
Roasted Garlic and Spinach Orzo

Preheat oven to 425 Remove the papery skin from the garlic bulb but do not peel or separate the cloves
- 1 whole garlic bulb
- 1 t plus 1 T olive oil, divided
- 1 3/4 cup uncooked whole wheat orzo pasta
- 2 1/2 cups chicken stock
- 3 oz reduced fat cream cheese, cubed
- 1 (8 oz) package fresh spinach, trimmed and chopped
- 1/4 cup shredded Asiago cheese
- 1/4 cup fat free milk
- 1 t salt-free garlic pepper seasoning blend
- 1/4 t salt
- 2 T minced fresh parsley
Grape and Spinach Salad with Raspberry Balsamic Dressing

Place spinach in large bowl
- 8 cups fresh baby spinach
- 4 1/2 cups grapes
- 1 1/4 cups mandarin orange segments (drained if using canned)
- 1/3 cup thinly sliced red onion
- 3/4 cup bottled light balsamic vinegar and oil dressing
- 1/4 cup orange juice
- 3 T raspberry jam
- 3/4 cup crunchy chow mein noodles
Cucumber Dill Salad

Using a mandolin slicer or knife, cur cucumber into very thin slices
- Brine:
- 1 seedless cucumber
- 1 medium white onion
- 1 t dill
- 1/2 c white vinegar
- 2 cups water
- 1 T kosher salt
- 1/4 t pepper
- 1/4 cup sugar
Oatmeal Chocolate Chip Cookies

Preheat oven to 375. In mixing bowl beat butter for 30 seconds
- 3/4 cup butter
- 1 3/4 cups flour
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1 egg
- 1 t baking powder
- 1 t vanilla
- 1/4 t baking soda
- 2 cups rolled oats
- 1 cup semisweet chocolate, butterscotch, or peanut butter pieces
Knorr Spinach Dip

Stir together all ingredients and chill for 2 hours
- 10 oz frozen chopped spinach, thawed and drained
- 1 pkg Knorr vegetable soup mix
- 1 1/2 cups sour cream
- 1 cup mayonnaise
- 8 oz water chestnuts, chopped
- 3 green onions, chopped
