- 1 1/4 cups graham crackers crumbs
- 5 tablespoons unsalted butter, melted
- 1/2 1 plus 1 tablespoon granulated sugar, divided
- 1/4 teaspoon ground cinnamon
- 2 (8-ounce) packages cream cheese, at room temperature
- 1 1/2 teaspoons cornstarch
- 3 large eggs, at room temperature
- 1/2 cup heavy cream, at room temperature
- 2 teaspoons vanilla extract
- 1 teaspoon fresh lemon zest
- 1/2 teaspoon almond extract

- 4.5 cups masa (Maseca brand tamale masa is the best)
- 3 sticks butter (I used 1/3c warm/liquid bacon grease and the 2 sticks + 3T salted butter, softened)

- 2-3 c liquid (I ended up using about 2C warm water)
