Rough chop your tomatoes and onion and place in a food processor or blender
- 1 1/2 cups chopped of fresh tomato
- 1/2 cup onion
- 3 cloves garlic
- 1/4 of 1 jalapeno (or to taste)
- 1 Tablespoon Cilantro
- Juice of 1 lime
- Pinch of salt

Preheat oven to 375 Spray pan Put ingredients in the pan, cover with foil
- 4 C Sliced Potatoes about 1/4 inch thick
- 1 can cream of cheddar soup
- 8 oz grated cheese
- 1/2 c sour cream
- Sliced onions, regular or green onions
- Salt and pepper to taste.
