Saute onion and carrot in 2 tablespoons butter until soft
- 1 cup onion , minced
- 1 cup carrot , minced
- 2 (10 1/2 ounce) cans chicken broth
- 4 tablespoons flour
- 6 tablespoons butter
- 1 cup heavy cream
- 1/2 cup cooking sherry
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon cayenne pepper
- fresh chives , minced
- salt
- 1/2 lb lump crab
Hotel Crab Cakes

Imitation crabmeat will work fine, too
- 3/4 cup plain bread crumbs
- 1/2 cup mayonnaise
- 1 egg
- 2 scallions, thinly sliced
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon-style mustard
- 1 tablespoon chopped fresh parsley
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Old Bay Seasoning
- 2 (6-1/2 ounce) cans lump crabmeat, drained and cleaned
- 2 tablespoons butter
Butter Toffee Cookies

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside
- 3/4 cup salted butter, room temperature
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 tablespoon vanilla
- 1 egg + 1 egg yolk
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 1/4 all purpose flour
- 1 1/2 cups toffee bits (1, 8-ounce bag)

- 1 large bottle Kraft Zesty Italian salad dressing
- 1/2 bottle McCormick Salad Supreme Seasoning*
- 2 cucumbers, chopped

- 1 red onion, diced
- 1 green pepper, chopped
Cheesy Ham and Hash Brown Casserole

Preheat oven to 375 degrees F (190 degrees C)
- 1 (32 ounce) package frozen hash brown potatoes
- 8 ounces cooked, diced ham
- 2 (10.75 ounce) cans condensed cream of potato soup
- 1 (16 ounce) container sour cream
- 2 cups shredded sharp Cheddar cheese
- 1 1/2 cups grated Parmesan cheese
Pasta w/Poached Egg, Asparagus, & Lemon

In pot, boil water and cook pasta 1 minute below recommended time
- 1/2 pound whole wheat thin spaghetti or angel hair pasta
- 1 pound asparagus, trimmed and cut into 1" pieces
- 4 tbsp. olive oil, divided
- 1/2 cup grated Parmesan cheese
- 1/3 cup low-fat ricotta
- 4 eggs, for poaching
- 1 tsp. white vinegar
- 1 pound shrimp, cleaned, cooked, and chopped (optional)
- 1 lemon, halved
- Salt and pepper to taste
