This recipe easily serves more than four
- 2 cups ricotta cheese
- 1 cup grated mozzarella cheese, divided*
- 1 cup grated 3-cheese blend, divided*
- 1 egg, lightly beaten
- 1 (16-ounce) bag frozen spinach, thawed, chopped and drained well
- Salt and pepper to taste
- 2 teaspoons dried oregano
- 1 (25-ounce) jar pasta sauce*
- 9 to 12 no-boil uncooked lasagna noodles

- 3 cups cake flour (not self-rising)
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 cup whole milk
- 1 tsp. vanilla extract
- 12 Tbsp. (1 1/2 sticks) unsalted butter , at room temperature
- 2 cups sugar
- 6 large egg whites , at room temperature
- Buttercream filling:
- 1 cup sugar
- 3 large egg yolks , at room temperature
- 24 Tbsp. (3 sticks) unsalted butter , at room temperature
- 1/3 cup shredded unsweetened coconut , toasted
- 3/4 tsp. finely grated blood orange zest or orange zest
- 1 Tbsp. blood orange juice or orange juice
- Buttercream icing:
- 1 cup sugar
- 4 large egg whites , at room temperature
- 24 Tbsp. (3 sticks) unsalted butter , at room temperature
- 2 tsp. finely grated lime zest
- 1 Tbsp. fresh lime juice
- 4 tsp. vanilla extract , preferably clear

- 1 small head red cabbage, about 1.5lbs
- 2 T EVOO
- 1 yellow onion, halved & cut crosswise 1/2" thick
- 1/2 c low-sodium vegetable broth
- 1/3 c apple cider vinegar
- 2 T honey
- 1/2 c currants

- 1 t salt

Preheat oven to 450°. In a medium bowl, blend butter, olives, lemon zest, juice, and salt
- 4 Tbsp. unsalted butter, softened
- 10 picholine (or other green) olives, pitted and chopped
