Orange Granita with Honey-Poached Pears, Cranberries and Citrus Recipe

You can tangy-sweet granita that you can make up to 2 weeks ahead—store it in the freezer until ready to serve
- 6 cups fresh orange juice
- 3/4 cup apple juice
- 1 vanilla bean, or 2 tsp. vanilla extract
- 1/2 cup honey
- 1 cup dried cranberries
- 2 ripe pears, peeled, cored, and cut into eighths
- 2 navel oranges, peel and pith removed, fruit cut into segments
- 1 grapefruit, preferably Ruby Red, peel, pith, and seeds removed, fruit cut into segments
- 8 mint leaves, very thinly sliced, for garnish

- Cake:
- 2 pieces of fresh ginger (each 4 inches long), peeled and grated
- 2 Tbsp. unsalted butter , softened
- 3 3/4 cups and 3 Tbsp. all-purpose flour

- 1 tsp. ground cinnamon

- 6 cups low-sodium [turkey or vegetable] broth
- 4 small carrots, sliced ¼-inch thick
- 1/2 cup orzo
- 1 1/2 cups shredded roasted turkey
- 2 tablespoons chopped fresh dill

- 1 1/2 pounds medium [scallops], peeled and shells reserved
- 4 cups ice water
- 3/4 teaspoon sea salt
- 3 tablespoons capers, packed in salt
- 5 tablespoons olive oil
- 1 cup fresh sage leaves, washed and patted dry
- 3 cloves garlic, minced
- 2 shallots, chopped
- 1/2 teaspoon red pepper flakes (or to taste)
- 1/4 cup dry white wine
- 1/4 cup fresh Meyer lemon juice (about 1 lemon)
- 1 teaspoon chopped Meyer lemon zest
- 1/8 teaspoon freshly ground pepper
- 3 cups cooked rice, to serve

- 1/2 c sugar
- 1.25 t lemon juice
- 1/2 t grated lemon zest
- 1/2 t vanilla extract

Prosciutto Wrapped Scallops with Salad Greens

- For the Scallops:
- 10 sea scallops
- 10 slices prosciutto di Parma
- 2 t canola oil
- For the Salad:
- 2-3 T walnut oil
- 2-3 T balsamic vinegar
- 2 T creamy (young) Gorgonzola cheese, pinched into small pieces
- 2 Comice pears, peeled & cut into small cubes
