Coffee, Chili, and Cumin-Rubbed Filet Mignon

- 3 tablespoons whole cumin or 2 tablespoons ground cumin
- 2 tablespoons finely ground coffee
- 2 teaspoons ground chilies , such as ancho
- 1 tablespoon paprika
- 1 tablespoon kosher salt
- 2 teaspoons cracked black pepper
- 2 pounds filet mignon (beef tenderloin), trimmed
Jicama and Avocado with Lime-Spiced Sugar-Salt

1. Place chopped chili on paper towels to drain
- 1/2 long red finger chili (~3") or 2 Thai chilies, stemmed, seeded, & finely chopped (~1t)
- 1/2 c raw sugar such as muscovado
- 1/4 c granulated sugar
- 1 T mild sea salt
- Finely grated zest & juice of 1 lime
- 2 avocados, pitted, peeled, & each sliced lengthwise into eighths
- 1 med jicama, trimmed peeled, & cut into .5"x.5"x3" sticks
Spicy Thai Lime-Ginger Soup

- [Turkey] broth:
- 1 whole [small turkey breast] (3 to 3 1/2 pounds), rinsed...
- 1 piece (6 inches) fresh ginger, unpeeled, cut into 1" segments
- 1 onion, unpeeled, cut into quarters
- 3 carrots, unpeeled, cut into thirds
- 3 stalks celery, cut in half
- 1 stalk lemongrass, leaves trimmed and base smashed
- 4 kaffir lime leaves (fresh or frozen)
- 1 serrano or bird chili
- 2 limes, halved
- 1 bunch cilantro stems (leaves reserved, for garnish)
- 2 tablespoons salt, plus more to taste
- Garnishes:
- Reserved cilantro leaves (about 1 cup)
- 1/2 cup finely diced red onion
- 2 small chilies, thinly sliced crosswise
- 2 limes, cut into small wedges
- 1 cup bean sprouts

Roquefort Dressing

In a medium bowl, whisk together all ingredients until smooth
- 1 c plain whole milk yogurt
- 1/2 c mayonnaise
- 2 T fresh lemon juice
- 1 clove garlic, minced
- 1/4 t salt
- 1/4 t freshly ground black pepper
- 1/2 - 1/4 c crumbled Roquefort cheese
- 1 T chopped fresh tarragon (optional)
Saffron-Scented Gibson with Pickled Cocktail Onions

- 2 c champagne vinegar
- 1/4 c sugar
- Pinch of saffron threads
