Eggs Florentine with Sun-Dried Tomato Pesto

1. Heat the oil in a large nonstick skillet over medium-high heat
- 1 tsp olive oil
- 1 package (9 ounces) pre-washed spinach
- 1/3 c fat-free Greek-style yogurt
- 1/4 c sun-dried tomato pesto (MUFA)
- 1 tsp vinegar
- Pinch of salt
- 4 large eggs
- 2 whole grain English muffins, split and toasted
- Freshly ground black pepper
Eggplant Caprese with Tomato and Basil

Preheat oven to 425°F. Slice the eggplant and tomatoes crosswise into ½-inch-thick pieces
- 1 Medium eggplant
- 2 Ripe beefsteak tomatoes
- 2 t Olive oil
- 1 t Balsamic vinegar
- 1/2 tsp Salt
- 1/4 tsp. Black pepper
- 12 Fresh basil leaves
- 8 Thin slices unsalted fresh mozzarella (about 4 ounces total)
Sauteed Peas, Facon and Onions

Cook bacon in skillet until crisp
- 2 slices fake bacon
- 1 1/2 Tbsp oil
- 2 cups thwed frozen pearl onions
- 2 cups thawed frozen or fresh peas
- 1-2 Tbsp chopped fresh dill, optional
Brunch Quiche

1. Heat oven to 400°F with rack in center position
- 1 store-bought pie dough for 9" crust (we used Immaculate Baking Company)
- 1 c 2% milk
- 3 lg eggs
- 3 lg egg whites
- 2 Tbsp snipped fresh chives or scallion greens (optional)
- 8 oz sliced mushrooms
- 1/2 c finely chopped onion
- 3 oz Swiss, fontina, or Gruyere, grated (about 3/4 c)
- 2 oz sliced low-sodium deli ham, torn into small pieces
Extreme Brownies

Preheat oven to 350 degrees
- 1/2 c chopped pecans
- 1/3 c (5 1/3 Tbsp) butter or margarine
- 1 (12 oz) bag (or 2 c) chocolate chips (see note), divided
- 1/2 c minus 1 Tbsp sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 c plus 1 Tbsp flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Note: If you like, substitute other flavored baking chips for the 1 cup of chocolate chips stirred into the batter at the last step.
Coffee Cake Muffins Crusted with Cinnamon and Sugar

Preheat the oven to 350º
- For the Cinnamon Sugar Topping:
- 1-3/4 cup flour
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/3 cup oil
- 3/4 cup granulated sugar
- 1 egg
- 3/4 cup milk
- 1/4 cup butter, melted
- 1/3 cup granulated sugar
- 1 Tablespoon cinnamon
REESES PIECES DOUBLE CHOCOLATE CHUNK COOKIES

1.Preheat oven to 350 degrees F
- 1 stick unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon kosher salt
- 1 cup chocolate chunks
- 1 cup mini Reeses Pieces
Breakfast Burritos

1. Beat eggs and combine with tofu using the back of a fork until tofu is in small pieces
- 4 Flour tortillas
- 1/4 cup Salsa
- 2 Eggs (or half a carton of egg substitute)
- 1/4 lb. Firm tofu
- 1/4 cup Feta cheese
- 1/4 cup Part skim mozzarella cheese
- 1/2 tsp. Dried basil
- 1/4 tsp. Salt
- Dash pepper
- 1/4 tsp. Oregano
Breakfast Stuffins

1. Heat oven to 350°F. Coat standard 12-cup muffin pan with baking spray
- 1 bakery loaf whole wheat or whole grain bread
- 1 jar (12 oz) roasted red bell peppers, rinsed and drained
- 1 c chopped onion
- 5 oz baby spinach, coarsely chopped
- 3 lg eggs
- 3 lg egg whites
- 1 1/2 c 2% milk
- 1 Tbsp Dijon mustard (optional)
- 3 oz reduced-fat Cheddar, shredded (3/4 c)
Fried Pickles

In a large plastic food-storage bag, mix together the flour, salt and black pepper
- 2 cups dill pickle chips or spears
- 1 cup flour
- 1/2 teaspoon salt plus more to taste
- 1 teaspoon black pepper plus more to taste
- 1 egg
- 1/2 cup buttermilk
- 2 cups finely crushed saltines
- 1/2 teaspoon cayenne
- 1/2 teaspoon dried dill weed
- Salt to taste
- Oil for frying
