Beer Bread

Preheat oven to 375 degrees for metal loaf pan (or 350 degrees for glass)
- Optional ingredients:
- 3 c flour
- 1/4 c sugar
- 1 1/2 Tbsp baking powder
- 1 1/2 tsp salt
- 1 12-oz can beer, room temperature
- 1/4 c butter, melted (for topping)
- SWEET-
- 1 tsp cinnamon
- 2 Tbsp sugar or vanilla sugar
- 1 c raisins
- or
- SAVORY-
- 1 Tbsp italian herb mix (or Penzey's tuscan sunset or pasta sprinkle)
- 1/4 tsp minced garlic
- 1/4 tsp crushed red pepper
- 1/2 tsp salt
- 1 Tbsp olive oil
Acapulco Baked Eggs

In a 8-inch square baking pan, place butter
- 8 Large eggs
- 2 tbsp. Butter or margarine
- 6 tbsp. Milk
- 3/4 tsp. Salt
- 1/4 tsp. Pepper
- 2/3 cup Shredded extra-sharp Cheddar cheese
- 1 can (4 oz.) chopped green chilies
Fontina and Mascarpone Baked Pasta recipe

Cook pasta according to package directions, omitting salt and fat
- 1 * 1 pound uncooked penne
- 1/4 * 1/4 cup all-purpose flour (about 1 ounce)
- 3 * 3 cups fat-free milk
- 2 * 2 cups (8 ounces) shredded fontina cheese
- 1/4 * 1/4 cup (2 ounces) mascarpone cheese
- 3/4 * 3/4 teaspoon salt
- 1/4 * 1/4 teaspoon freshly ground black pepper
- * Cooking spray
- 3 * 3 (1-ounce) slices white bread
- 1 * 1 tablespoon butter
- 1 * 1 small garlic clove, minced
- 1 1/2 * 1 1/2 tablespoons chopped fresh parsley
Strawberries and Cream Muffins

Preheat oven 400 Put paper liners in the cups of your muffin pan, or use nonstick baking spray liberally
- 1 cup whole milk (or, you can use something like 2/3 cup 2 percent milk, and 1/3 cup half-and-half mixed together)
- 1/2 cup unsalted butter
- 1 1/2 tsp. vanilla extract
- 1/8 tsp. almond extract
- 2 large eggs
- 2 cups AP flour
- 3/4 cup granulated sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup fresh ripe strawberries chopped into very small pieces (the redder and sweeter, the better!)
- 4 oz. full-fat cream cheese, very soft
- 1 and 1/2 Tbsp. of liquid from one whole egg, beaten lightly
- 1/3 cup granulated sugar
- 1/4 tsp. vanilla extract
Old Time Vanilla Ice Cream

In a large bowl, whisk together eggs, condensed milk
- 2 eggs
- 1 can sweetened condensed milk
- 1/4 cup sugar
- 1/4 cup brown sugar, not packed
- 1 pint of heavy whipping cream
- 1 pint of half and half
- 1/4 tsp salt
- 2 1/2 tablespoons of real vanilla extract
Nutella French Toast with Strawberries

1. Combine the strawberries, sugar and lemon juice in a bowl
- 1 cup sliced strawberries
- 2 teaspoons sugar
- Juice of half a lemon
- 4 slices of bread (I used Italian)
- 1/2 About 1/2 cup Nutella
- 1 large egg
- 3/4 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- butter (for the pan)
- Powdered sugar for serving
Christmas Crunch Salad

- 8 oz cauliflower florets
- 8 oz broccoli florets
- cherry tomatoes
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp vinegar
- 1-2 tbsp sugar

- 1 pound dried bean mix (navy, kidney, pinto mix), rinsed
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 stalks celery, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 medium yellow onion, chopped
- 1 bay leaf
- A few sprigs fresh thyme
- 8 ounces dried barley
- 8 ounces baby spinach
- Toasted crusty bread or baguette, for serving
Crockpot Pasta e Fagioli Soup with Kale

1.In a large skillet, on medium heat, add olive oil
- 1 tbsp extra virgin olive oil*
- 1 large onion, finely chopped
- 4 garlic cloves, crushed
- 3 large kale leaves, tough stem removed and very finely chopped
- 2 large carrots, peeled and diced
- 2 celery stalks, diced
- 4-5 medium white mushrooms, sliced (optional)
- 14 oz can white (Cannellini or Great Northern) beans, drained & rinsed
- 14 oz can tomato sauce
- 1 cup any short whole wheat or brown rice pasta, dry*
- 4 cups water*
- 4 cups any stock (I used low sodium chicken stock)*
- 1 tsp oregano, dry
- 1/2 tsp thyme, dry
- 1/4 tsp salt
- 1/2 tsp freshly ground black pepper
- Freshly chopped parsley & grated Parmesan cheese, for garnish (optional)
