Death by Chocolate

Beat all ingredients except chocolate chips in a large bowl until thoroughly mixed
- Cake:
- 4 Eggs
- 1 Cup Sour Cream
- 1/2 Cup Water
- 1/2 Cup Oil
- 1 Pkg Chocolate Cake Mix
- 1 Pkg Chocolate Instant Pudding
- 12 Oz Semisweet Chocolate Chips
- Icing:
- 6 tablespoons butter
- 1/3 c milk
- 1/3 c unsweetened cocoa
- 3 cups powdered sugar
- 1/4 cup chopped pecans, toasted (optional)
- 2 teaspoons vanilla extract
Creamy Corn and Spinach

Heat oil, garlic and jalapeno in a large skillet over medium heat for 2 minutes
- 2 Tbsp olive oil
- 2 cloves garlic, chopped
- 1 jalapeno, chopped
- 16 oz pkg frozen corn, thawed
- 2 scallions, thinly sliced
- 1/2 c sour cream
- 3 c spinach, roughly chopped
- 1/2 tsp salt
- 1/2 tsp pepper
Bisquick Banana Muffins

Place biscuit mix in a medium bowl and break up any lumps
- 2 cups Bisquick baking mix
- 1 egg, lightly beaten
- 1 1/3 cups bananas, mashed (about 3 bananas)
- 1/2 cup brown sugar, packed
- 3 tablespoons milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
The Best Queso Cheese Sauce

Place a medium pot over medium heat
- 1 Tb. butter
- 1 shallot, diced
- 2 garlic cloves, minced
- 1-2 jalapeños, seeded and diced
- 2 chipotle chiles, diced (canned in adobo sauce)
- 1 1/2 cups California half & half (or evaporated milk)
- 1 Tb. cornstarch
- 4 oz. California cream cheese, cut into cubes and softened
- 2 tsp. yellow mustard
- 8 oz. California smoked cheddar cheese, shredded
- 4 oz. California sharp cheddar cheese, shredded
Healthy Peanut Butter Baked Oatmeal

- 192 g (2 cups) Old Fashioned Rolled Oats
- 62 g (1/2 cup) Peanut Flour
- 13 g (2 tbs) Ground Flaxseed
- 1 tsp Double-Acting Baking Powder
- 1-2 tsp Ground Cinnamon (to taste)
- 1 tsp Salt
- 2 cups Unsweetened Vanilla Soy Milk
- 185 g (3/4 cup) Unsweetened Applesauce
- 64 g (1/4 cup) Natural Peanut Butter (no sugar/oil added)
- 2 tsp Stevia Extract
Ramen Noodle Stir Fry

Instructions Whisk the sauce ingredients together in a bowl and set aside
- For the Sauce:
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 2 tablespoons soy sauce
- 2 teaspoons hoisin sauce
- 1 teaspoon brown sugar
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- For the ramen noodle stir fry:
- 9 ounces ramen noodles, about 3 packs (discard the flavor packet)
- 1 tablespoon peanut oil (or other high-heat oil)
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 4 ounces shiitake mushrooms, stems removed, sliced
- 1 small head of broccoli, cut into florets and sliced julienne
- 1/2 red bell pepper, sliced julienne
- 1 egg, lightly scrambled (optional)
- 2 scallions, sliced
- 1 heaping tablespoon minced cilantro
Caramel-Pecan French Silk Pie

1. Prepare baked pastry shell; set aside
- 1 baked pastry shell
- 1 c whipping cream
- 1 c semisweet chocolate chips
- 1/3 c butter
- 1/3 c sugar
- 2 egg yolks, lightly beaten
- 3 Tbsp creme de cacao or whipping cream
- 1 12 1/4 oz jar caramel ice cream topping (1 cup)
- 3/4 c coarsely chopped toasted pecans (or almonds)
- 1 c whipped cream
- chocolate curls (optional)
Christmas Mice Cookies

In a microwave, melt chocolate chips; stir until smooth
- 2/3 cup semisweet chocolate chips
- 2 cups chocolate wafer crumbs (about 40 wafers), divided
- 1/3 cup sour cream
- 36 red nonpareils
- 1/4 cup sliced almonds
- 18 pieces black shoestring licorice (2 inches each)
Scrambled Grains with Mushrooms

- 1 lb mushrooms, sliced
- 2 cups cooked grains (brown rice or quinoa)
- 1 small minced chile
