Strawberry Bread

Preheat oven to 350 degrees F (175 degrees C)
- 2 cups fresh strawberries
- 3 1/8 cups all-purpose flour
- 2 cups white sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/4 cups vegetable oil
- 4 eggs, beaten
- 1 1/4 cups chopped pecans
Cauliflower Gratin

1. Preheat the oven to 375 degrees F
- 1 (3-pound) head cauliflower, cut into large florets
- Kosher salt
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 3 tablespoons all-purpose flour
- 2 cups hot milk
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon grated nutmeg
- 3/4 cup freshly grated Gruyere, divided (can be replaced with cheddar)
- 1/2 cup freshly grated Parmesan
- 1/4 cup fresh bread crumbs

- Bottom and top layers:
- 1 (6 oz) pkg. chocolate chips
- 1 (6 oz) pkg. butterscotch chips
- 1 c peanut butter (creamy or crunchy)
- 1/2 lb Spanish peanuts
- Filling:
- 1/2 c butter
- 4 Tbsp regular vanilla pudding mix (not instant)
- 2 tsp vanilla
- 4 Tbsp cream
- 4 c powdered sugar
Beer Cheese Ranch Dip

Combine cheeses and Hidden Valley Ranch dip mix in medium bowl
- 2 c shredded cheddar cheese
- 2 packages (8 oz each) cream cheese, softened
- 1 packet (1 oz) Hidden Valley Original Ranch Dips Mix
- 1/2 to 3/4 c beer
- chopped green onions and shredded cheese, for garnish
- Chips, pretzels or vegetable pieces

Add to bread machine in order of your machine's instructions
- High altitude version:
- 1 c warm water
- 1 egg
- 4-5 tsp oil
- 3 1/4 c bread flour
- 1/4 c less about 1 tsp sugar
- 1 1/2 tsp salt
- 2 tsp yeast
- Optional:
- 2/3 c cinnamon bites for cinnamon chip bread
Zucchini Noodle Lasagna

1. Heat oven to 400°F. Trim off zucchini ends
- 3 medium zucchini (8 to 10 oz each)
- 1 tbsp. olive oil
- 1 large garlic clove, thinly sliced
- 1 (8-oz) package white mushrooms, sliced
- 2 c. store-bought marinara sauce (preferably no-sugar-added; Private Selection Spicy marinara for Tim)
- 12 basil leaves, shredded, plus more for garnish
- 1/4 tsp. red pepper flakes
- 1 c. ricotta cheese
- 1 egg, lightly beaten
- black pepper
- 1 c. halved grape tomatoes
- 4 oz. mozzarella cheese, thinly sliced and torn
- 1/4 c. grated Parmesan
Butterfinger Blondies with Butterfinger Buttercream

- Blondies
- 1 cup butter
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 tsp vanilla
- 2 eggs
- 2 1/2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp coarse sea salt
- 2 cups coarsely chopped Butterfinger Bars (approx 16 "Fun Size" bars)
- Frosting
- 1/2 cup room temp butter (1 stick)
- 1/2 cup vegetable shortening
- 2 1/2 - 3 cups powdered sugar
- 1/2 cup chopped Butterfinger Bars (approx 4 "Fun Size" bars)
No Bake Cookies

Mix margarine, sugar, milk and cocoa in heavy sauce pan
- 1/2 c margarine
- 2 c sugar
- 1/2 c milk
- 1/4 c cocoa
- 2 1/2 c quick cooking oatmeal
- 1/2 c chunky peanut butter
- 1 Tbsp vanilla
- 1/4 tsp salt
- 1/2 c grated coconut (optional)
Healthy Portobello Pizza

Heat up the olive oil in a non-stick frying pan
- Number of Servings: 4
- 4 medium tomatoes
- 4 large portobello mushrooms
- 4 cloves of garlic
- 1 tbs lemon juice
- 1 leek
- 1 medium onion
- fresh basil leaves (about 7, or you can use 1-2 tbs dried)
- parmigiano reggiano cheese (parmesan works also)
- fresh parsley (about 7 sprigs fresh, or 1-2 tbs dry)
- 2 tbs olive oil
- pinch of salt
