Zucchini-Potato Latkes with Tzatziki

- 1 pound Zucchini, shredded
- 2 cups Shredded cooked potato (see Note)
- 2 Medium shallots, minced, divided
- 1 Egg, beaten
- 2 cups Fresh whole-wheat breadcrumbs (see Tip)
- 1/2 cup Crumbled reduced-fat feta cheese
- 2 tablespoons Chopped fresh dill, divided
- 1/2 teaspoon Salt, divided
- 1/2 teaspoon Freshly ground pepper, divided
- 2 tablespoons Extra-virgin olive oil, divided
- 1 cup Low-fat plain yogurt
- 1/2 Medium cucumber, peeled, seeded and shredded
- 1 tablespoon Red-wine vinegar
Pumpkin Dump Cake

Special equipment: a 6-quart slow cooker Spray the insert of a 6-quart slow cooker with cooking spray
- Nonstick cooking spray, for spraying the slow cooker insert
- Two 15-ounce cans pumpkin puree
- 1/2 cup granulated sugar
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon kosher salt
- One 15.25-ounce box white or yellow cake mix
- 1 stick (8 tablespoons) unsalted butter, melted
- 1/2 cup chopped pecans
- 1 cup heavy cream
- 1/4 cup confectioners' sugar
Malted Milk Brownies

To make chocolate malted milk brownies, reduce the flour to 1 cup and add 1/2 cup natural cocoa
- 3/4 cup malted milk powder
- 1 cup firmly packed brown sugar
- 1 1/2 cups All-Purpose Flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 3 eggs
- 2 teaspoons vanilla
- 1/2 cup vegetable oil
- 1 cup chocolate chips or filled baking chunks
- 3/4 cup chopped walnuts, pecans or hazelnuts
- 4 ounces caramel, cut into 1/2 inch cubes, OR 12 caramel candies, each cut in half

Preheat your oven to 350°F
- 1/2 cup butter
- 2 cups (15 ounces) brown sugar, lightly packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon butterscotch or vanilla-butternut flavor, optional
- 1/2 teaspoon salt
- 1 cup (4 ounces) King Arthur White Whole Wheat Flour
- 3/4 cup (3 ounces) King Arthur Unbleached All-Purpose Flour
- 2 teaspoons baking powder
- 2 1/2 cups (15 ounces) chocolate, butterscotch, or cinnamon chips; toffee bits, or a combination

Mini Mac and Cheese Pies

Preheat the oven to 350 degrees
- 1 and 1/2 cups Ritz crackers, crushed**I used one whole sleeve and used my food processor to crush the crackers
- 2 cups white cheddar cheese, grated and divided
- 4 tablespoons unsalted butter, melted
- 4 and 1/2 cups cooked elbow macaroni (about 8 ounces uncooked)
- One 5.2-ounce container of Boursin Garlic and Herb cheese
- 2 tablespoons unsalted butter, cold
- 2 large eggs
- 1/2 cup milk
- 1/4 cup sour cream
- 1/4 teaspoon salt
- Pinch red pepper flakes
Pesto, Ricotta and Tomato Tortilla Pizza

Preheat oven to 450F degrees
- 2 sprays cooking spray
- 4 medium whole wheat tortillas
- 1/2 c reduced-fat pesto sauce
- 1/2 c part-skim ricotta cheese
- 1/2 c shredded part-skim mozzarella cheese
- 1 c fresh tomatoes, chopped
Sweet Onion Corn Bake

In a large skillet, saute onions in butter until tender
- 2 large sweet onions, thinly sliced
- 1/2 cup butter, cubed
- 1 cup (8 ounces) sour cream
- 1/2 cup milk
- 1/2 teaspoon dill weed
- 1/4 teaspoon salt
- 2 cups (8 ounces) shredded cheddar cheese, divided
- 1 egg, lightly beaten
- 1 can (14-3/4 ounces) cream-style corn
- 1 package (8-1/2 ounces) corn bread/muffin mix
- 4 drops hot pepper sauce
Churro Puffs

These were SO easy to make! Even a non-baker (like me), can have them whipped up in no time
- Ingredients:
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
- 3/4 cup + 2 Tbs all-purpose flour
- 3 Tbs cornstarch
- 1/4 (slightly heaping) tsp baking soda
- 1/4 (heaping) tsp fine sea salt
- 1 egg, beaten
- 1/2 cup canola oil
- 3/4 cup + 2 Tbs club soda
Cabbage Salsa

Mix all ingredients well, chill, then serve with chips
- 4 cups shredded cabbage
- 2 scallions, thinly sliced (optional)
- 4 tablespoons minced red onions
- 3-4 cloves garlic, minced
- 2 jalapeno peppers, minced (seeds in for spicy, seeds removed for mild)
- 3 ripe tomatoes, seeded and diced
- 2 Tbsp cilantro, stemmed and chopped
- 1/4 cup lime juice
- dash sugar
- salt and freshly ground pepper, to taste
Walnut Parmesan Biscuits

Preheat oven to 400?F. Line a baking sheet with parchment paper or coat with cooking spray
- 1 cup Chopped California walnuts, divided
- 1 1/3 cups All-purpose flour
- 1/2 cup Whole wheat flour
- 2 1/2 teaspoons Baking powder
- 2 teaspoons Granulated sugar
- 2 teaspoons Dried basil, crushed
- 1/4 cup (1/2 stick) cold butter, cut into small pieces
- 1/2 cup Shredded Parmesan cheese
- 2 tablespoons Oil-packed sun dried tomatoes, drained and chopped
- 3/4 cup Low-fat (1%) cottage cheese
- 2/3 cup Low-fat (1%) milk
