Maple Nut Hemp Seed Clusters

For use on salads instead of croutons
- 1/4 cup hemp seeds
- 1/4 tsp. ground cinnamon
- 1 pinch salt
- 1/2 cup raw walnut halves
- 1 1/2 Tbs. pure maple syrup
Roasted Ranch Potatoes with Bacon and Cheese

Preheat oven to 350 degrees
- 2 pounds potatoes (unpeeled, washed and cut into chunks)
- 1/2 cup ranch dressing (bottled, not packet)
- 1/4 cup shredded cheddar cheese, plus more for topping (if desired)
- 1/4 cup crumbled, cooked bacon
- 1 tablespoon dried dill weed
- 3 scallions, washed and chopped
- Salt
- Pepper
- Non-stick cooking spray
Oriental "Chicken" Salad

In small saucepan, combine the first seven ingredients
- 1/2 c sugar
- 1 Tbsp cornstarch
- 1/4 c water
- 1/4 c vegetable oil
- 1/4 c ketchup
- 3 Tbsp cider vinegar
- 1 Tbsp soy sauce
- 1 medium head iceberg lettuce
- 2 c cubed cooked Quorn chik tenders
- 1 c salted cashews
- 1 can (8 oz) sliced water chestnuts, drained
- 1 pkg (6 oz) frozen snow peas, thawed
- 1 can (3 oz) chow mein noodles
- 1/4 c chopped green onions
Cheesy Potatoes

Mix all ingredients together except corn flakes and 2 Tbsp melted butter
- 10 c or 1 pkg frozen hash brown potatoes
- 1/2 c butter, melted
- 1 can cream soup (mushroom, chicken)
- 12 oz sour cream
- 1/2 c milk
- onions to taste (1 small or minced)
- 2 c shredded cheddar cheese
- 2 . Tbsp melted butter
- 2 c crushed cornflakes
Dark Chocolate and Oat Clusters

Heat peanut butter, milk and chips in a saucepan
- 2 Tbsp peanut butter
- 2 Tbsp 1% low-fat milk
- 1/4 c semisweet chocolate chips
- 3/4 c old-fashioned rolled oats
The Best Cauliflower Ever

Heat 3 tablespoons of the olive oil in a large skillet over medium heat
- 4 tablespoons olive oil
- 1/2 large head or 1 small head cauliflower, cut into florets
- Salt and fresh ground pepper
- 3 cloves garlic, chopped
- 1 roasted red pepper, seeded and chopped
- 2 tablespoons soft tofu (or cream as substitute)
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons breadcrumbs
- 1 tablespoon sesame seeds

Bulgar, Garbanzo Bean, and Cucumber Salad

- 2 cups whole grain quick-cooking bulgur (11 to 12 ounces)
- 2 15- to 16-ounce cans garbanzo beans (chickpeas), drained
- 2 1/2-pint containers small red and/or yellow cherry tomatoes
- 1 cup diced unpeeled English hothouse cucumber
- 1 cup diced roasted red peppers from jar
- 2/3 cup (packed) chopped fresh dill
- 1/4 cup white balsamic vinegar
- 1 tablespoon ground cumin
- 6 tablespoons olive oil
Magic Mint Chocolate Bark

PREHEAT oven to 325° F. Line small baking sheet with foil or parchment paper
- 1 2/3 cups (10-oz. pkg.) NESTLÉ® TOLL HOUSE® Dark Chocolate & Mint Morsels
- 1/3 cup coarsely chopped oven roasted or toasted almonds

- 1/2 cup butter or margarine
- 1 bag (10 oz) white vanilla baking chips (1 2/3 cups)
- 1 1/4 cups Gold Medal™ all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup chopped nuts
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 3 eggs
- 1 1/2 cups powdered sugar
- 2 to 3 tablespoons butter or margarine, softened
- 1/2 to 1 teaspoon vanilla
- 1 to 2 tablespoons warm water or milk
