Quinoa Mexi-Lime Salad

Cilantro adds the perfect tangy zest to this quinoa salad
- 1 1/4 cup quinoa, dry and rinsed
- 2 1/2 cups No-Chicken Broth
- 15-ounce can reduced sodium black beans, drained and rinsed
- 15.25-ounce can whole kernel sweet corn, drained and rinsed
- 1 red bell pepper, diced
- 6 green onions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño pepper, seeds and ribs removed, finely diced
- 1/3 cup lime juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Holiday Brunch Casserole Recipe

In a large bowl, combine the hash browns, sausage, bacon, green pepper, 1 cup cheese and onion
- 4 cups frozen shredded hash brown potatoes
- 1 pound bulk pork sausage, cooked and drained
- 1/2 pound bacon strips, cooked and crumbled
- 1 medium green pepper, chopped
- 2 cups (8 ounces) shredded cheddar cheese, divided
- 1 green onion, chopped
- 1 cup reduced-fat biscuit/baking mix
- 1/2 teaspoon salt
- 4 eggs
- 3 cups 2% milk
Baked Oatmeal

Heat oven to 350º F. Spray 8-inch square glass baking dish with cooking spray
- 2 cups Quick Quaker® Oats OR 2-1/4 cups Old Fashioned Quaker® Oats, uncooked
- 1/3 cup granulated sugar
- 3-1/3 cups fat-free milk
- 1/2 cup cup liquid egg substitute with yolk or 2 eggs, lightly beaten
- 2 teaspoons vanilla
- 1/3 cup firmly packed brown sugar

- 1 Tbsp butter, melted
- 1/8 tsp salt
- 6 Tbsp cream
- 6 Tbsp sugar
- 1/4 tsp ground cardamom

- 1 c butter, softened
- 3/4 c sugar
- 3/4 c packed brown sugar
- 2 eggs
- 1 tsp salt
- 1 tsp vanilla
- 1 tsp baking soda dissolved in 1 tsp hot water
- 1 1/2 c flour
- 2 c quick oats
- 2 c chocolate chips (or 2 c any combination of baking chips - butterscotch, chocolate, white chocolate)

Sunny's Bacon Cheeseburger Casserole

- "Meat":
- 8 strips fake bacon, chopped
- 1 tablespoon olive oil
- 2 pounds vegetarian crumbles
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons Mexican oregano
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- Sauce:
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 2 cups whole milk, at room temperature
- 1 pint (2 cups) heavy cream, at room temperature
- 2 tablespoons yellow mustard
- Kosher salt
- Casserole:
- 2 pounds frozen cheese ravioli, thawed
- 8 slices Swiss cheese
- 2 plum tomatoes, seeded and chopped
- 8 slices American cheese
- 8 ounces shredded Cheddar and Monterey Jack cheese blend
- 1 head iceberg lettuce, finely shredded (like straw)
- 1/4 cup thinly sliced red onion (like paper thin!)
- 2 tablespoons pickle juice
Harvest-Time Popcorn

Pop popcorn. Combine popcorn with nuts and potatoes
- 1/4 c popcorn kernels (about 8-10 cups air popped)
- 1 cup mixed nuts
- 2 cans (about 3 cups) shoestring potatoes
- 1/4 cup melted butter
- 1 teaspoon diced dill weed
- 1 teaspoon lemon pepper
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
No-Bake Energy Bites

- 1/3 cup coconut flakes (optional - can replace with some kind of nut if you want)
- 1/2 cup nut butter
- 1/2 cup ground flax seed
- 1/2 cup chocolate chips (optional, but I didn’t use them this time around)
- 1/4 cup raw honey
