Quinoa Pizza Bites

1. Cook your protein-filled quinoa! Boil the quinoa and 1c

- 2 large eggs
- 1 onion, chopped
- 1 cup shredded mozzarella
- 2 teaspoons minced garlic
- 2 Tablespoons dried basil
- 2 teaspoons. dried oregano
- pinch of salt

- 1 lb assorted Nuts (Raw Cashew Pieces, Raw Pecan Pieces, Walnut Halves & Pieces)

- 1/2 cup water
- 1/4 cup tahini (sesame-seed paste)
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1 whole chipotle pepper from canned chipotle peppers in adobo sauce
- 2 cloves garlic
- 1 1/2 teaspoons cumin
- 1 (7 ounce) jar roasted red bell peppers, drained
- 6 oil-packed sun-dried tomatoes, drained
- 1/2 cup chopped cilantro
- 1/2 teaspoon salt
- ground black pepper to taste
Energy Bar

1. Heat oven to 300°F. Line 9" x 9" baking pan with foil
- 2 C cereal, coarsely chopped
- 3/4 C roasted unsalted nuts, coarsely chopped
- 3/4 C dried fruit, coarsely chopped
- 2 tbsp whole wheat flour
- 1/2 C second nut or fruit or an extra (see chart for quantities), optional
- 1/3 C sugar, honey, or brown sugar
- 1/2 tsp salt
- 2 lg egg whites
- 1/2 tsp vanilla or almond extract, optional
- Cereal: Cornflakes, granola, puffed rice, rice or wheat flakes
- Dried fruit: apples, apricots, blueberries, cranberries, dates, pineapples, raisins, strawberries
- Nuts: Almonds, cashews, hazelnuts, macadamias, peanuts, pecans, pistachios, walnuts
- Extras: Choc chips, pb chips, pumpkin seeds, coconut, flaxseed, poppy seeds, sesame seeds, sunflower seeds, toasted wheat germ
Triple Chocolate Scones

1) Preheat your oven to 375°F
- Scones
- 2 cups King Arthur Unbleached All-Purpose Flour
- 2/3 cup King Arthur White Whole Wheat Flour or Premium Whole Wheat Flour
- 1/3 cup Dutch-process cocoa
- 1/2 teaspoon espresso powder, optional for flavor and color
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 cup (8 tablespoons) cold butter, cut into pats
- 1 1/2 cups semisweet or bittersweet chocolate chips
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 cup milk or liquid whey (the liquid drained from yogurt)
- Glaze
- 2/3 cup semisweet or bittersweet chocolate chips
- 1/4 cup half & half or liquid coffee creamer
Popeye Crockpot Soup

Combine all ingredients in crock pot and cook on high for 6 hours
- 3 Boneless Chicken Breasts, cut into bite size pieces
- 2 cans Chicken Broth (No Chicken Broth)
- 1 can Cream of Chicken Soup (or other cream soup)
- 1/2 Onion, chopped
- 1 1/2 cups Celery
- 1 1/2 cups Carrots
- 1 can Lima Beans
- 1 can Cannelloni Beans
- 1 pkg Frozen Chopped Spinach, thawed and squeeze out liquid
- 1/2 cups Uncooked White Rice
- Pinch of Dill
- Salt & Pepper, to taste
Cheesy Potato Vegetable Soup

Put everything except Velveeta into a dutch oven
- cups of the following vegetables, chopped:
- onion
- celery
- carrots
- 1/2 cabbage, chopped (or a bag of coleslaw mix will work in a pinch)
- 2 lbs. red potatoes, peeled and chopped
- 6 cups chicken broth
- 1 lb. Velveeta, cut into small squares

- 1 cup (250 ml) whole wheat flour
- 1 cup (250 ml) unbleached all-purpose flour
- ½ cup (125 ml) oatmeal
- ¼ cup (60 ml) wheat or oat bran
- 2 tbsp (30 ml) ground flax seeds (optional)
- 1 tbsp (15 ml) baking powder
- 1 tsp (5 ml) baking soda
- ½ tsp (2 ml) salt
- ½ cup (125 ml) soft butter
- ½ cup (125 ml) brown sugar
- 2 eggs
- 1 cup (250 ml) Ricotta cheese
- ½ cup (125 ml) milk
- 1 cup (250 ml) frozen berries
- 1 cup (250 ml) Ricotta cheese
- 2 tbsp (30 ml) honey
- Cinnamon to taste (optional)

- 2 cups (475 ml) water
- 1/3 cup (48 g) dry black-eyed peas
- 1/3 cup (43 g) carrots, chopped
- 1/6 cup (33 g) millet
- 2 tablespoons (19 g) minced bell pepper
- 1 clove garlic, minced
- 1 teaspoon Cajun seasoning
- 1/8 to 1/4 teaspoon liquid smoke, to taste
- evening ingredients:
- 1 cup (56 g) minced greens (collards, kale, etc.)
- 2 tablespoons (32 g) tomato paste
- Salt and pepper, to taste
- 2 or 3 buns, for serving (*use gluten-free)
