Creamy Caramel Flan

Preheat oven to 350 degrees F (175 degrees C)
- 3/4 cup white sugar
- 1 (8 ounce) package cream cheese, softened
- 5 eggs
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 fluid ounce) can evaporated milk
- 1 teaspoon vanilla extract
Aunt Barb's Cucumber Salad

Mix sugar, vinegar, salt and celery seed together
- 7 cups of thinly sliced cucumbers
- 2 medium onions, sliced thin and pulled apart
- 2 cups of sugar
- 1 cup of vinegar
- 1 teaspoon salt
- 1 teaspoon celery seed (I use slightly less)
Chili Soup

Brown hamburger, drain off fat
- 1 lb. hamburger
- 1 large onion, chopped
- 3 stalks celery, chopped
- 1 can tomatoes (crushed) (16 oz)
- 1-1/2 tomato soup
- 1 small can tomato sauce
- 4-5 c. water
- salt & pepper to taste
- 1/2 t. red pepper
- 1/2 t. chili powder (or more)
- 1/2 t. garlic powder
- 1/2 t. celery salt
- cumin, to taste
- 1/2 t. Knorr's Aromat Seasoning or more
- 1 t. "Better Than Bouillon" Beef Base or more
- 1 large (15 oz.) can dark kidney beans
- 1/2 box elbow macaroni (cooked)
Cream of Broccoli

Saute onion and celery in butter until soft, about 5 minutes
- 4 Tablespoons butter
- 1 onion, chopped
- 2 stalks of celery, minced
- 4 c. chicken broth
- 2 c. water
- 2 bunches of broccoli
- 1 potato, chopped
- 1/2 c. half and half
- 1/2 t. salt
- 1/4 t. pepper
Mouse's Macaroni and Cheese

"The cheesiest and easiest recipe I know
- 1 1/2 cups uncooked elbow macaroni
- 1/4 cup butter
- 2 tablespoons all-purpose flour
- 1 teaspoon mustard powder
- 1 teaspoon ground black pepper
- 2 cups milk
- 8 ounces American cheese, cubed
- 8 ounces processed cheese food (eg. Velveeta), cubed
- 1/4 cup seasoned dry bread crumbs
Italian Sausage, Tomato and Cream Pasta

Melt butter with oil in heavy large skillet over medium-high heat
- 1 T. butter
- 1 T. olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 lb. sweet Italian sausage, casings removed
- 2/3 c. dry white wine
- 1 14-1/2 oz. can petite diced tomatoes with juices
- 1 c. whipping cream
- 6 T. chopped Italian parsley
- 1 lb. penne (or slightly less)
- 1 c. freshly grated Parmesan cheese
Bolognaise

Mince the garlic and place in a heavy saucepan with the oil
- 3 cloves garlic
- 1/4 c. oil
- 1 lb. lean ground beef
- 1 8-oz. tomato sauce
- 1 6 oz. can tomato paste
- 3/4 c. dry red wine
- 1/2 c. water
- 1/2 t. oregano
- 1/4 t. basil
- 1/2 t. salt
- freshly ground pepper
- 1 12-oz. package spinach noodles
- 1 c. milk
- 3 T. butter
- 3 T. flour
- 6 T. light cream
- 1 c. grated Parmesan cheese
- 1 c. grated Gruyere cheese
Two-Cheese Squash Casserole

Cook squash in boiling water to cover in a large skillet 8 to 10 minutes or just until tender
- 4 pounds yellow squash, sliced
- 4 tablespoons butter or margarine, divided
- 1 large sweet onion, finely chopped
- 2 garlic cloves, minced
- 2 1/2 cups soft breadcrumbs, divided
- 1 1/4 cups shredded Parmesan cheese, divided
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup chopped fresh chives
- 1/2 cup minced fresh parsley
- 1 (8-ounce) container sour cream
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 2 large eggs, lightly beaten
- 1/4 teaspoon garlic salt
