Strawberry Glaze Pie

Wash berries; remove hulls
- 6 cups fresh medium size strawberries
- 1 cup water
- 3/4 cup sugar
- 3 tablespoon cornstarch
- red food coloring
- 1 baked 9-inch pastry shell
Mexicali Chili Bake

Soak beans and drain. Gently cook beans in 4 cups of water until tender
- 1/2 lb dry pinto beans
- 1 lb ground beef
- 1 can (10 oz) enchilado sauce
- 1 can (8 oz) tomato sauce
- 1/2 lb cheddar cheese, grated
- 1 small onion, chopped
- 1 package (6 oz) corn chips
- 1 cup sour cream
- I substitute 8 oz of additional enchilada sauce instead of tomato sauce.
- I have also substituted left over pork tenderloin for the ground beef
Blueberry Shortcakes

Cream Using electric mixer, beat cream and creme fraiche in bowl until mixture holds peaks
- Cream
- 1 c. chilled heavy whipping cream
- 1 c. chilled creme fraiche or sour cream (8 oz)
- Berries
- 4 c. fresh blueberries
- 6 T. sugar
- 1/4 c. creme de cassis
- 1 T. fresh lemon juice
- Biscuits
- 2-1/4 c. flour
- 1/2 c. sugar
- 1 T. baking powder
- 1 T. baking soda
- 1/2 t. salt
- 6 T. chilled unsalted butter, cut into 1/2 inch cubes
- 1 c. chilled buttermilk
- 2 T. whipping cream
- raw sugar
Blue Cheese Coleslaw

Place first 4 ingredients in processor; blend until smooth about 30 seconds
- 1/2 cup blue cheese, crumbled
- 1/2 cup buttermilk
- 3 T. apple cider vinegar
- 2 T. sugar
- large head of green cabbage, shredded
Potato Casserole

Warm oven to 350 degrees. Mix onions and hashbrowns together and set aside
- 1 (2 lb) bag frozen hashbrown potatoes
- 1 (16 oz) container sour cream
- 1 can cream of chicken soup
- 12 ozs. shredded cheddar cheese
- 4 T. butter
- 1 med. onion (diced)
- (may need a bit of milk to thin)
- 4 c. cornflakes
- 2 t. salt
- cayenne pepper or Tabasco, to taste
Corned-Beef Dinner

Barely cover corned beef with cold water
- 3-4 lbs. corned-beef brisket (flat one) (disregard seasoning package)
- 2 onions, sliced
- 2 cloves garlic, minced
- 6 whole cloves
- 2 bay leaves
- 6 small to medium potatoes, pared
- 6 small carrots, pared
- 6 cabbage wedges (1 medium head)
- prepared mustard, enough to blend other ingredients
- 1/4 c. brown sugar
- 1/4 t. ground cloves
Spaghetti and Meatballs

Mix together the ground beef, eggs and next four ingredients and form into meatballs
- 1-1/2 lbs. ground beef
- 2 eggs
- 1/2 c. bread crumbs
- 1-1/2 t. basil
- 3/4 t. onion salt
- 3/4 t. salt
- 1 medium jar of Ragu spaghetti sauce
- red wine
- fennel seeds
Peach Crisp

Heat oven to 375 degrees. Grease square pan, 8x8x2 inches
- 4 cups of sliced peaches
- 2/3 packed brown sugar
- 1/2 cup flour
- 1/2 cup oats
- 1/3 cup margarine or butter, softened
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Snickerdoodles

Heat oven to 400 degrees. Mix 1-1/2 cup of sugar, margarine, shortening and eggs in large bowl
- 1-1/2 cup sugar
- 1/2 cup margarine or butter, softened
- 1/2 cup shortening
- 2 eggs
- 2-3/4 cups flour
- 2 t. cream of tartar
- 1 t. baking soda
- 1/4 t. salt
- 3 T. sugar
- 3 t. cinnamon
Stacey's Hamburger Seasoning
