Cornstarch Custard

Mix together first 4 ingredients in a saucepan
- 1/4 cup sugar
- 2 T. cornstarch
- 1/4 teaspoon salt
- 1 egg
- 2 cups milk
- 1 T. butter
- 1-1/2 teaspoon vanilla
Southern Peach Cobbler

Preheat oven to 425 degrees F (220 degrees C)
- MIX TOGETHER:
- 8 fresh peaches - peeled, pitted and sliced into thin wedges
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
Muffaletta Sandwich

1. Cut bread in half horizontally
- 1 loaf Mufaletta bread (or Italian bread)
- 1 cup olive mix
- 1/4 lb sliced ham
- 1/4 lb sliced mortadella
- 1/4 lb sliced Genoa salami
- 1/4 lb sliced provolone
- 1/4 lb sliced mozzarella
Thai Cucumber Salad with Roasted Peanuts

Whisk first 5 ingredients in medium bowl
- 1/4 cup fresh lime juice
- 1 1/2 tablespoons fish sauce (nam pla)*
- 1 1/2 tablespoons sugar
- 1 1/2 tablespoons minced seeded jalapehili (about 1 large)
- 2 garlic cloves, minced
- 1 1/2 English hothouse cucumbers, halved, seeded, thinly sliced
- 3/4 cup sliced red onion
- 3 tablespoons chopped fresh mint
- 3 tablespoons coarsely chopped lightly salted roasted peanuts
Strawberry Pretzel Salad

Preheat oven to 400 degrees F (200 degrees C)
- 2 cups crushed pretzels
- 3/4 cup butter, melted
- 3 tablespoons white sugar
- 1 (8 ounce) package cream cheese, softened
- 1 cup white sugar
- 1 (8 ounce) container frozen whipped topping, thawed
- 2 (3 ounce) packages strawberry flavored gelatin
- 2 cups boiling water
- 2 (10 ounce) packages frozen strawberries
Green Bean Casserole

In a 1 quart casserole, blend soup, milk, soy sauce and pepper until smooth
- 2 cans of green beans (or use frozen)
- 1 c. mushroom soup
- 1 t. soy sauce
- dash of pepper
- 1 can french fried onions
- 1/3 c. milk
Cream Cheese Strudel

Mix crust ingredients, divide into 4 parts and chill
- 2 c. flour
- 1/2 lb. butter
- 8 oz. sour cream
- 2 (8 oz. each) pkg. cream cheese
- 1 egg
- 2/3 c. sugar
- 1 t. vanilla
Strawberry Pie

Arrange half of strawberries in baked pastry shell
- 1 (9 inch) pie crust, baked
- 1 quart fresh strawberries
- 1 cup white sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- 1/2 cup heavy whipping cream
Black Bean and Corn Salad

Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar
- 1/3 cup fresh lime juice
- 1/2 cup olive oil
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/8 teaspoon ground cayenne pepper
- 2 (15 ounce) cans black beans, rinsed and drained
- 1 1/2 cups frozen corn kernels
- 1 avocado - peeled, pitted and diced
- 1 red bell pepper, chopped
- 2 tomatoes, chopped
- 6 green onions, thinly sliced
- 1/2 cup chopped fresh cilantro
Chicken Fried Chicken

1.Heat oven to 350 degrees
- 30 saltine crackers (or Ritz or butter crackers)
- 2 tablespoons all-purpose flour
- 2 tablespoons dry potato flakes
- 1 teaspoon seasoned salt
- 1/2 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 1 egg
- 6 skinless, boneless chicken breast halves
- butter
- olive oil
