NOTES : I have cut this recipe in to 4ths and it still comes out very good
- 1 1/2 Lb Pinto Beans, Rinsed And Drained
- 3 Cups Water
- 2 Cups Beef Stock
- 3/4 Lb Pork, Cut Into Small Chunks
- 3/4 Lb Ham Steak With Bone, Cut Into Small Chunks
- 1 Onion, Chopped
- 4 Garlic Clove, Chopped
- 1 Bay Leaf
- 1/2 Lb Chorizo, Cut Into Small Chunks
- Salt And Pepper, To Taste
Chili with Horseradish Sour Cream

1. Heat large nonreactive Dutch oven or large pot over medium-high heat until hot
- CHILI
- 8 oz. ground beef (93% lean)
- 6 oz. Italian turkey sausage, casings removed
- 3 medium poblano chiles, seeded, deveined, chopped
- 1 cup chopped onions
- 1 (16-oz.) can dark kidney beans, drained, rinsed
- 1 (14.5-oz.) can stewed tomatoes
- 1 cup water
- 2 tablespoons smoked paprika
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- TOPPING
- 1/2 cup light sour cream
- 2 tablespoons grated fresh horseradish
- 1 1/2 teaspoons lemon juice
- 1/4 teaspoon salt
Frozen Hot Chocolate Cheesecake

Make crust: In a food processor, pulse Oreos until they are fine crumbs
- 24 oreos
- 6 tbsp. melted butter
- 1/4 c. sugar
- 2 blocks cream cheese, softened
- 1/2 c. powdered sugar
- 1/4 c. chocolate sauce
- 2-3 hot cocoa packs
- pinch of salt
- 2 c. heavy cream
- 1 c. mini marshmallows
Grilled Pork Loin

Marinate 2 hours or more, turning the meat occasionally
- 2 1/2 - 3 lb. boneless pork loin, split lengthwise
- Asian Marinade (Panda Express Kung Pao is good)
Mayonnaise

In a glass bowl, whisk together egg yolk and dry ingredients
- 1 egg yolk*
- 1/2 teaspoon fine salt
- 1/2 teaspoon dry mustard
- 2 pinches sugar
- 2 teaspoons fresh squeezed lemon juice
- 1 tablespoon white wine vinegar
- 1 cup oil, safflower or corn
Potato Beef Lasagna

•In a large skillet, cook beef over medium heat until no longer pink; add onion and cook until tender, drain
- 1 pound lean ground beef
- 1 can (7 ounces) Tomato Sauce
- 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
- 3 potatoes, baked and sliced
- 1 medium onion, thinly sliced
- 1 cup (4 ounces) shredded cheese
- 1 tea Garlic Powder
- 2 tea Beef Granuals
- 1 tea Onion Powder
- 1 tea Italian Seasoning
Dry BBQ Rub

1.Combine all ingredients in small bowl; press evenly onto beef steak(s)
- 2 tablespoons chili powder
- 2 tablespoons packed brown sugar
- 1 tablespoon ground cumin
- 2 teaspoons minced garlic
- 2 teaspoons cider vinegar
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon ground red pepper

FOR CAKE: PREHEAT oven to 375 F
- 1/4 Cup powdered sugar (to sprinkle on towel)
- 3/4 Cup all-purpose flour
- 1/2 Tsp baking powder

- 1/4 Cups Cider Vinegar

Mini Peach Pies

- 5 peaches, peeled and diced
- 1/2 cup of white sugar
- 3 tbsp brown sugar
- 2 tbsp of cornstarch
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 egg + 1 tbsp water
