Mexican Macaroni Salad

Grill the corn on a grill pan, or just place it in a hot skillet to brown some of the kernels
- FOR THE SALAD:
- 1 pound Elbow Macaroni, Cooked To Package Instructions, Drained, And Rinsed With Cold Water
- 2 ears Fresh Corn, Husks And Silks Removed
- 1 can (15 Oz. Size) Black Beans (or Kidney Beans), Drained And Rinsed
- 1/2 cup Chopped Black Olives
- 6 whole Roma Tomatoes (or 2 Large Tomatoes), Chopped
- 3 whole Green Onions, Sliced Thin
- 1/2 whole Red Onions, Finely Diced
- Chopped Cilantro (optional)
- FOR THE DRESSING:
- 1 cup Jarred Salsa (spicy Is Best!)
- 1 cup Sour Cream
- 1/4 cup Mayonnaise
- 1 clove Garlic, Minced Or Pressed
- 1/2 teaspoon Cumin
- Salt And Pepper, to taste
- 2 Limes, Juiced (optional)
Salsa

Combine all ingredients and chill for 2 hours and serve
- 1 Can Petite Diced Tomatoes, 14.5 Oz
- 1/4 Cups Onion, Chopped
- 2 Tablespoon Fresh Cilantro, Chopped
- 1 Jalapeno, Seeded & Chopped
- 1 Clove Garlic, Minced
- 1/2 Teaspoon Sugar
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Pepper

Cinnamon Rolls

Preheat oven to 400 degrees F
- 1 loaf frozen white bread dough, thawed in refrigerator
- Flour, for dusting surface
- 1 cup packed brown sugar
- 1 tablespoon ground cinnamon
- 2/3 stick butter, softened
- 1 stick unsalted butter, softened
- 1 cup powdered sugar
- 1/3 cup cream cheese
- 1 teaspoon vanilla extract
Savory Scalloped Potatoes

- 6 medium red skinned potatoes
- 3 Tbl butter
- 6 green onions, with 2 inches green, sliced
- 3 Tbl flour
- 2 1/4 Cup whole milk
- 1/8 Tsp pepper
- salt, to taste
- 1/4 Tsp dried mustard
- dash nutmeg
Rosemary Au Gratin Potatoes

In a large saucepan, melt butter over medium heat
- 1/4 cup butter, cubed
- 1/4 cup all-purpose flour
- 2 cups half-and-half cream
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 pounds potatoes, peeled and cut into 1/8-inch slices
- 2/3 cup grated Parmesan cheese
Scotts Holiday Salad

1. In bowl pour 1/2 cup cold water
- 1/2 Cup cold water
- 2 envelopes plain gelatin
- 1 Cup water
- 1/2 Cup champagne vinegar or white vinegar
- 1 Cup granulated sugar
- 1 Tsp kosher salt
- 3 Cup peeled and seeded cucumber, cut into 1/4-inch pieces
- 1/2 Cup thinly sliced green onions, white and green parts
- 1/2 Cup celery, cut into 1/4-inch pieces
- Vegetable oil or cooking spray

- 1/2 tsp Dry Mustard
- 1 tsp Salt
- 1/8 tsp Pepper
- 2 C Cheddar Cheese, shredded (1/4 C reserved)
