- 1 tablespoon ground coriander

- 1 tablespoon ground annatto seeds (or paprika)

Crash Hot Potatoes

Bring a pot of salted water to a boil
- 12 whole New Potatoes (or Other Small Round Potatoes)
- 3 Tablespoons Olive Oil
- Kosher Salt To Taste
- Black Pepper To Taste

Bring a large pot of water to a boil
- 3 medium beets, peeled and cut into small cubes
- 1 jalapeno pepper, seeded and finely chopped
- 1/2 red onion, chopped
- 1/2 cup cilantro, finely chopped
- 2 1/2 Tbsp lime juice
- 2 tsp honey
- 1/2 tsp salt
White-Bean Chili

In a saucepan, heat the olive oil over medium heat
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced garlic
- 3/4 cup diced onion
- 1 pound skinless, boneless chicken breasts, finely chopped
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1/2 teaspoon ground white pepper
- Pinch of red pepper flakes
- Kosher salt and freshly ground pepper
- 1 pound collard greens, stemmed and roughly chopped (about 5 cups)
- 1 1/2 cups chopped green chiles (fresh or canned)
- 1 quart low-sodium chicken broth
- 2 15-ounce cans navy beans, drained and rinsed
- 1/2 bunch fresh cilantro, chopped
- Light sour cream, chopped tomatoes and/or lime wedges, for garnish (optional)

- FILLING:
- 1 cup butter, softened
- 2 packages (3 ounces each) cream cheese, softened
- 2 cups all-purpose flour
- 1 package (14 ounces) caramels
- 1/4 cup plus 3 tablespoons evaporated milk
- FROSTING:
- 2 tablespoons shortening
- 2 tablespoons butter, softened
- 1 cup confectioners' sugar

Heat 2 tablespoons vegetable oil in a large pot or Dutch oven over high heat
- 5 tablespoons vegetable oil
- 2 pounds beef chuck roast, cut into 3/4-inch cubes
- Kosher salt and freshly ground pepper
- 1 large onion, chopped
- 4 cloves garlic, finely chopped
- 1 jalapeno pepper, finely chopped (remove seeds for less heat)
- 3 tablespoons chili powder, plus more to taste
- 2 teaspoons ground cumin
- 1 tablespoon tomato paste
- 1 14.5-ounce can diced tomatoes
- 3 cups low-sodium beef broth
- 2 15-ounce cans kidney beans, undrained
Cajun Spice Seasoning Mix
