1) Pat steak dry with paper towels and season with salt and pepper
- 2 strip steaks, about 1 1/2-inches thick, sliced thin crosswise
- Salt and Pepper
- 3 Tbsp olive oil
- 1 small red onion, halved and sliced thin
- 1 Tbsp red wine vinegar
- 1/3 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 2 Tbsp prepared horseradish, drained
- 8 slices thick-cut crusty bread

1) Remove roast from the refrigerator, loosely wrapped, 3 hours before cooking

- Tetrazzini:
- 8 Oz uncooked linguine
- 3 Tbsp butter or margarine

- 1/2 Tsp lemon-pepper seasoning
- 1 3/4 Cups chicken broth
- 1/2 Cup half-and-half
- 2 Tbsp dry sherry, if desired
- 1 1/2 Cups frozen cooked deveined peeled medium shrimp, thawed, tail shells removed
- 1 Cup Green Giant Valley Fresh Steamers frozen baby sweet peas, thawed
- Topping:
- 2 Tbsp butter or margarine, melted

- 1 Tsp ground cumin
- 1/2 Tsp salt

- 8 uncooked manicotti
- 1 cup whole-milk ricotta cheese
- 1 (3-oz.) pkg. cream cheese, softened
- 1/4 cup chopped green onions
- 6 oz. (about 25) frozen cooked small shrimp, thawed, tails removed and shrimp cut in half crosswise
- 1 (6-oz.) can crabmeat, drained, flaked
- 1 1/2 cups meatless tomato pasta sauce
- 2 oz. (1/2 cup) shredded mozzarella cheese

For The Meatballs: Preheat oven to 400 to 450 degrees F
- White Sauce:
- 8 ounces pizza dough
- Cornmeal, for dough
- 1 1/2 to 2 cups White Sauce, recipe follows
- 3 Meatballs, broken up, recipe follows
- Chopped cooked bacon, for topping
- Chopped Canadian bacon, for topping
- Chopped ham, for topping
- 1/4 cup butter
- 8 ounces yellow onion, finely diced
- 2 tablespoons chopped garlic
- 3/4 cup all-purpose flour
- 1 1/2 cups chicken stock
- 1 quart heavy whipping cream
- 1 pinch black pepper
- 8 ounces grated Parmesan
- 1 pinch ground nutmeg
- 2 tablespoons course ground black pepper
- Meatballs:
- 2 pounds ground beef
- 1/2 pound Italian sausage, casing removed
- 3/4 cups finely chopped green pepper
- 3/4 cups finely chopped yellow onions
- 1/4 cup finely chopped garlic
- 1/2 cup finely grated Parmesan
- 3 cups Italian bread crumbs
- 3 eggs
- 1/4 cup freshly chopped parsley leaves

- 1 tablespoon olive oil
- 1 onion, chopped fine
- 2 tablespoons tomato paste
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 cup finely chopped fresh basil
- Stuffed Shells:
- Salt
- 1 (12-ounce) box jumbo pasta shells
- 12 saltines, broken into pieces
- 2-1/2 cups fat-free cottage cheese, drained if necessary
- 2 cups shredded part-skim mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped fresh basil
- 2 garlic cloves, minced

- One 13.5-ounce can coconut milk

- 1 1/2 cups long-grain white rice, rinsed
- 1 tablespoon green curry paste
- 6 ounces green beans, cut into 2-inch pieces
- 10 ounces frozen peas, thawed
- 3/4 pound frozen shrimp—peeled, deveined and coarsely chopped
- Juice of 1/2 lime
