Tuna and Vegetable Salad

Prepare all ingredients and too together before arranging on a bed of shredded lettuce
- 12 - 14 oz. tuna, packed in water, drained
- 2 C chopped tomato
- 1 C diced cucumber
- 3/4 C sliced red onion
- 3/4 lbs. fresh green beans, blanched and cut in 1 1/2 in pieces
- 1/2 C diced celery
- 3 hard cooked eggs, chopped
- 3/4 C Hidden Valley Ranch Dressing
- Shredded lettuce
Curried Corn and Shrimp Chowder

Cut the kernels from the corn
- 4 ears of corn
- 2 T olive oil
- 1 large yellow onion, diced
- 2 t curry powder
- 1 1/2 t smoked paprika
- 1 (15 oz) can lite coconut milk
- 1 qt. chicken broth
- 2 large russet potatoes, peeled and diced
- 1 pound large raw shrimp, shells & tails removed
- salt and pepper to taste
- hot sauce to taste
Sesame Seed Tea Cookies

Parchment paper on cookie sheets
- 3 C flour
- 3/4 C sugar
- 2 t baking powder
- 1/8 t salt
- 1/2 C butter, softened
- 2 large eggs, beaten
- 1/4 C whole milk
- 2 t vanilla
- 1/4 C whole milk in a bowl
- 3/4 C sesame seeds
Chewy Coconut Clusters

For the base, mix butter, flour and sugar together in mixer
- Base:
- 2/3 pound unsalted butter, softened
- 2 2/3 C unbleached flour
- 2/3 C powdered sugar
- Topping:
- 8 C sweetened shredded coconut
- 2 C walnut pieces
- 4 C condensed milk
Pork and Beans Bread

Spray two 9 x 5 x 3 loaf pans with Pam
- 15 oz. pork & beans (Van Camps)
- 4 beaten eggs
- 1 C vegetable oil
- 1 t vanilla
- 2 C sugar
- 1 t baking soda
- 1/2 t baking powder
- 1/2 t salt1 1/2 t cinnamon
- 1 C chopped pecans
- 3 C flour packed
Scandinavian Almond Cake

Sprinkle a few almonds in the bottom of the pan
- Cut a strip of parchment paper 8" wide x 16" long. Lay it in the pan so bottom is covered and the strip sticks out in "ears" on the long side of pan. Spray paper with Pam.
- 1 stick butter
- 1 1/4 C sugar
- 1 egg
- 1/2 t baking powder
- 1 1/2 t almond extract
- 2/3 C cream
- 1 1/4 C flour
- 1/4 C sliced almonds
Chicken Spinach Lasagna Casserole

Preheat oven to 350 degrees
- 1 10 oz. package frozen spinach, thawed and drained
- 2 C cooked chicken, shredded
- 2 C grated cheddar cheese
- 1/3 C chopped onion
- 1 T cornstarch
- 1/2 t salt
- 1/4 t pepper
- 1 T soy sauce
- 1 10 oz cream of mushrom soup
- 1 C sour cream
- 1 4 1/2 oz jar sliced mushrooms
- 1/3 C mayonnaise
- 6 lasagna noodles
- 1 C grated Parmesan cheese
- 1 C chopped pecans
Cocoa Cake with Caramel Icing

Preheat overto 350. Grease and lightly flour 2 (9 inch) pans
- COCOA CAKE
- 2 C flour
- 2/3 C cocoa
- 1 1/4 t baking soda
- 1/4 t baking powder
- 1 t salt
- 2/3 C butter
- 1 2/3 C sugar
- 3 large eggs
- 1/2 t vanilla
- 1 1/3 C water
- CARAMEL ICING
- 4 C sugar
- 1 C milk
- 1 stick butter
- 1/8 t baking soda
- 1 t vanilla
Dream Bars

Preheat oven to 350. Blend flour and 1/2 C butter together into paste
- 1 C flour
- 1/2 C butter, softened
- 2 eggs
- 1 1/2 C brown sugar
- 1/2 C sweetened shredded coconut
- 1 C walnuts, chopped, plus more finely chopped walnuts for garnish
- 2 T flour
- 1/4 t baking powder
- 1/2 t salt
- 1 t vanilla
- 1 1/2 C powdered sugar
- 2 T butter, softened (for frosting)
- 2 T orange juice
- 2 T lemon juice
- few drops of food coloring
