Scalloped Potatoes

Heat oven to 375. Butter a 9 x 13 inch or 3 quart baking dish
- 2 T unsalted butter plus more for the baking dish
- 1 medium onion, finely chopped
- 2 C heavy cream
- 2 C whole milk
- 1 bay leaf
- 1 t fresh thyme leaves
- 1/4 t ground nutmeg
- kosher salt and black pepper
- 4 pounds russet potatoes (8 medium) peeled, sliced 1/4 inch thick
- 6 ounces Gruyere or Cheddar, grated (about 1 1/2 C)

- 4 C finely crushed vanilla wafers (a 12 oz. box is about 2 1/2 C crushed)
- 1 C chopped nuts - pecans
- 1/2 C white Karo syrup
- 1/2 C rum
- 2 T Nestles sweet dry cocoa
- 1 T strong brewed coffee

Easy Day Before Casserole

- 7 oz. macaroni (uncooked)
- 1 can celery soup
- 1 can mushroom soup
- 1 small jar pimento (optional)

- 1 1/2 T unsalted butter, cold and thinly sliced into 10 pieces
- 1 medium banana, thinly sliced
- 1/2 C (2 oz) pecans, chopped
- 3 T dark brown sugar
- 1 7.5 oz. tube refrigerated buttermilk biscuits
Beef and Broccoli Stir Fry

Make marinade for meat by measuring soy sauce, rice wine vinegar, sugar and sesame oil into medium size bowl
- 2 T soy sauce
- 1 T rice wine vinegar
- 1 T sugar
- 1/2 t sesame oil
- 2 1/2 t cornstarch
- 1 clove garlic, minced
- 1 t minced fresh ginger
- 3/4 lb. flank steak
- 1 medium head broccoli
- 2 T vegetable oil
- 1/2 C chicken stock
- 2 T oyster-flavored sauce

- 1/2 C sliced mushrooms
- 2 T minced onion
- 1 clove garlic, crushed
- 1 t fresh lemon juice
- 1 t worcestershire sauce

- 2 T snipped fresh parsley leaved
- 1 pound beef tenderloin, cut into 8 slices

- 1 pint sour cream
- 1 can cream of chicken soup
