Chocolate Peanutbutter Cake

Mix sugar and flour together
- 2 C sugar
- 2 C flour
- 1 C butter
- 1 C peanut butter
- 1 C water
- 1/2 C cream
- 1 t vanilla
- 1 t baking soda
- 2 beaten eggs
Chicken Chili Casserole

In a large stockpot or dutch oven heat the oil over medium heat
- 1/4 C vegetable oil
- 1/2 C finely chopped onion
- 1 clove garlic, minced
- 1 t chili powder
- 1/2 t cumin
- 1/2 t oregano
- 3 T cornmeal
- 2 1/2 C chicken broth
- 1 C tomato sauce
- 4 C chopped or shredded cooked chicken
- 2 C corn kernels
- 15 1/2 oz. can black beans, rinsed and drained
- 1 1/2 t salt
- 1/2 t freshly ground pepper
- 3 C tortilla chips
- 1 1/2 C finely shredded mild cheddar cheese
- 1/2 C finely shredded Monterey Jack cheese
Banana-Coconut Muffins

Heat the oven to 350. Lightly oil 12 muffin cups or coat them with cooking spray
- 1 1/2 C flour
- 2 t baking powder
- 1 t cinnamon
- 1/2 t baking soda
- 1/2 salt
- 1 C flaked sweetened coconut
- 1 1/3 C mashed ripe bananas (about 4 med)
- 1/4 C buttermilk
- 1 t vanilla
- 1/2 C butter, softened
- 3/4 C packed light brown sugar
- 1 large egg
Easy Cheesy Biscuits

In medium bowl, combine flour, cream of tartar, baking powder, baking soda and salt
- 3 C flour (packed)
- 2 t cream of tartar
- 1 t baking powder
- 1 t baking soda
- 1 t sea salt
- 1/2 C shredded cheddar
- 1/2 C shredded Havarti
- 2 large eggs beaten
- 1 C sour cream
- 1/2 C milk
- 1/2 C grated parmesan for topping
Sweet Potato Biscuits

Heat oven to 425. Sift the flour, baking powder, allspice, cloves and salt in large bowl
- 2 1/2 C flour
- 2 T baking powder
- 1/8 t ground cloves
- 1/8 t allspice
- 1/2 t salt
- 1/4 C packed light brown sugar
- 1/4 C unsalted butter (chilled)
- 1/4 C shortening (chilled)
- 1 1/2 C sweet potatoes (mashed)
- 2 T milk
My Own Pasta Bake

Cook pasta according to directions
- 8 oz. dried penne
- 1 14 oz. can whole Italian style tomatoes, undrained
- 1/2 of a 6 oz. can Italian-style tomato paste
- 1/4 C tomato juice
- 1/2 t sugar
- 1/2 t dried oregano
- 1/3 t pepper
- 1 lb. lean ground beef
- 1/2 C chopped onion
- 1/2 C shredded reduced-fat mozzarella cheese
Cranberry Crumb Bars

Heat oven to 375. Grease 13 x 9 pan with butter or cooking spray
- Filling:
- 2 1/2 C flour
- 1 C sugar
- 1/2 C ground slivered almonds
- 1 t baking powder
- 1/4 t salt
- 1 C cold butter
- 1 egg
- 1/4 t ground cinnamon
- 4 C fresh or frozen cranberries
- 1 C sugar
- Juice of 1/2 orange (4 teaspoons)
- 1 T cornstarch
- 1 t vanilla
Green Bean and Chicken Casserole

Heat oven to 350. Lightly spray 11 x 7 glass baking dish with cooking spray
- 1 can condensed cream of chicken soup
- 1/4 C milk
- 1 C herb seasoned stuffing crumbs
- 1/4 C butter
- 4 boneless skinless chicken breasts
- 2 C frozen cut green beans
Baked Ham and Eggs

Set oven to 325 degrees. Cube bread and ham
- 8 slices dried bread
- 2 C ham
- 3 C sharp cheddar cheese, grated
- 3 eggs
- 1/2 t dry mustard
- 2 C milk
- salt and pepper to taste
Vegetable Noodle Soup

In a large saucepan, heat the oil over moderately low heat
- 2 T cooking oil
- 2 onions, chopped
- 3 carrots, halved lengthwise and cut crosswise into 1/2 inch slices
- 1 1/2 quarts canned low sodium chicken broth
- 1 3/4 C canned diced tomatoes with their juice (15 oz)
- 1 T tomato paste
- 1/2 pound potatoes, peeled and cut into 1/2 inch dice
- 1/2 pound green beans, halved
- 1 1/4 t salt
- 3 ounces fine egg noodles (about 1 cup)
- 1/3 C chopped fresh parsley
